Pineapple shrimp in Endive Leaves

Chop shrimp and place into large bowl
- 1/2 pound cooked, peeled shrimp, tails removed
- 1 large cucumber, peeled, seeded and diced
- 2 1/2 cups diced pineapple (from about 1/2 fresh pineapple)
- 1/4 cup chopped cilantro
- 3 tablespoons lime juice
- 3 heads Belgian endive, seperated into individual leaves.

- 2 packages chicken tenderloins
- 1 cup all purpose flour (sifted).
- 1 cup seasoned bread crumbs
- 2 eggs beaten

- Pepper
- Vegetable oil

- 3 Tbls granulated sugar

- 1/4 cup packed light brown sugar
- 1/4 cup granulated sugar

Spaghetti with shrimp&broccoli

Preheat the oven to 400 degrees
- Kosher salt
- Freshly ground black pepper
- 8 cups broccoli florets (2 large heads)
- 1 lb (16 to 18 per lb) shrimp, peeled and deveined
- 1 lb imported spaghetti, such as De Cecco
- 8 largeee garlic cloves, cut into thin slivers
- 1/2 tsp crushed red pepper flakes
- 1/2 cup minced fresh parsley
- 1 cup freshly grated Parmesan cheese, plus extra for serving
Pork Tenderloin in slow cooker

1. Place pork tenderloin in a slow cooker with the contents of the soup packet
- 1 (2 pound) pork tenderloin
- 1 (1 ounce) envelope dry onion soup mix
- 1 cup water
- 3/4 cup red wine
- 3 tablespoons minced garlic
- 3 tablespoons soy sauce
- freshly ground black pepper to taste

- 1/2 cup chopped pecans
- 1/2 cup whipping cream
- 1/4 cup powdered sugar

Herb roasted chicken with melted onions

- 1/4 cup whole milk, warmed
