Preheat oven to 425 Heat the oil in large saute pan over high heat
- 2 Tablespoons olive oil
- 1 small zucchini finely diced
- 1 red bell pepper finely diced
- 1 yellow bell pepper finely diced
- 1/2 onion finely diced
- 5 cloves garlic smashed to a paste with coarse salt
- 1/2 teaspoon red pepper flakes
- Kosher salt and freshly ground pepper
- 1 large egg lightly beaten
- 1 tablespoon finely chopped fresh thyme
- 1/4 cup chopped fresh parsley
- 1 1/2 pounds ground turkey
- 1 cup Panko breadcrumbs (coarse)
- 1/2 cup freshly grated Romano or Parmesan cheese

Fire Roasted Skirt Steak

In a food processor or bowl, chop herbs, garlic and jalapeno
- 2/3 cup thyme leaves
- 2/3 cup rosemary leaves
- 1/2 cup sage leaves
- 12 cloves garlic
- 2 jalapeno chiles, seeded and chopped
- 1 cup olive oil
- 6 lb skirt steak or filet of beef trimmed
- Salt and pepper to taste

Roll into egg size balls and brown in olive oil, or bake at 350 for 25 minutes or until browned
- 2 Pounds ground beef, can be chuck or sirloin
- 1 Pound ground pork
- 3 Cloves garlic, minced
- 1/2 Onion diced fine
- 1 1/2 Cups breadcrumbs (3/4 cup per pound of meat)
- 4-5 eggs (usually 2 per pound of meat)
- 2 Teaspoons dried oregano
- 1 Tablespoon basil
- 1 Tablespoon parsley
- 4 Tablespoons grated Parmesan cheese
- 2 Teaspoons salt
- 2 Teaspoons fresh ground pepper
Braised pork roast with rigatoni

Slice pork roast into 1 inch slices, season with salt & pepper
- 3-4 pound boneless pork roast
- Salt & pepper
- 1 Tablespoon extra virgin olive oil
- 1 Large onion, chopped
- 6 Cloves garlic, smashed & minced
- 2 Quarts whole tomatoes in juice
- 8 Pickled cherry peppers, stemmed, seeded and quartered
- 2 Bay leaves
- 1 Teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 pinch of red pepper flakes
- 1 Teaspoon salt
- 1/2 teaspoon pepper

Place the chicken pieces in 1 or 2 large resealable plastic bags and add the rest of the ingredients
- 2 4-pound chickens, cut up
- 1 bunch scallions, minced
- 6 garlic cloves, peeled and finely chopped
- 2 cups orange juice
- 1/4 cup cider vinegar
- 2 tsp dried oregeno
- 2 tsp kosher salt
- 1/2 tsp crushed red pepper flakes
