Duck-In-Diner Meatloaf

From the Duck-In-Diner in Clarks Hill, Indiana
- 2 beaten eggs
- 18 saltine crackers, crushed
- 3 tsp Worcestershire sauce
- 1/2 small onion, minced
- 1/2 green pepper, minced
- 8 oz can tomato sauce
- 2 lbs ground beef
- 2 tsp brown sugar
- 1/2 tsp prepared mustard
Antipasto Salad

By mirving
Place all salad ingredients except for dressing and shredded cheese in a large bowl
- DRESSING:
- 1 bag (10 oz) Romaine lettuce
- 6 cherry tomatoes, halved
- 1/2 cup red onion, cut thinly
- 1/3 cup pitted Kalamata or black olives
- 2 slices provolone cheese, about 1/8 inch thick, cut in eighths
- 1 slice hard salami, about 1/8 inch thick, cut in eighths
- 1 slice Italian ham such as cappacola or prosciutto, about 1/8 inch thick, cut in eighths
- 1/4 cup shredded Italian cheese blend or shredded parmesan cheese
- 1/4 cup olive oil
- 2 tblsp red wine vinegar
- 1 tsp Italian herb seasoning
Best Bean Chili

Coat a large saucepan with cooking spray
- 1 lb ground beef
- 1 1/2 cups chopped onion
- 1 cup chopped green pepper
- 2 cloves minced garlic
- 1 (15oz) can kidney beans, drained and rinsed
- 1 (15oz) can pinto beans, drained and rinsed
- 3 (14.5oz) can diced tomatoes with green chiles
- 2 tblsp brown sugar
- 1 tblsp unsweet cocoa powder
- 2 tblsp chili powder
- 1 tsp ground cumin
Creole Tomato Salad

To prepare salad, alternate tomato and onion slices on a platter
- SALAD:
- 3 ripe tomatoes, cut into 1/4 inch thick slices
- 1 sweet onion, thinly sliced and separated into rings
- 1/4 tsp salt
- 1 tblsp thinly sliced fresh mint
- 2 tsp chopped fresh chives
- VINAIGRETTE:
- 4 tsp olive oil
- 4 tsp red wine vinegar
- 1 tsp Dijon mustard
- 1/2 tsp minced fresh garlic
Macadamia Melts

In a large bowl beat butter and the 1/2 cup sugar on medium speed until light and fluffy
- 1 cup softened butter
- 1/2 cup powdered sugar plus 2 tblsp
- 2 tsp vanilla
- 2 cups flour
- 1 cup chopped macadamia nuts
Seashell Provolone Casserole

Saute onion in olive oil until tender
- 3 minced onions
- 1/4 cup olive oil
- 2 lbs ground beef
- 15 1/2 oz jar spaghetti sauce
- 16 oz can diced tomatoes
- 4 oz can pieces of mushrooms
- 1 tsp garlic salt
- 8 oz pkg seashell macaroni
- 8 oz sliced Provolone cheese
- 3 cups sour cream
- 4 oz shredded mozzarella cheese
Scalloped Potatoes and Ham

Preheat oven to 350. Spray baking dish with cooking spray
- 2 lbs red potatoes, cut into 1/4 inch slices
- 8 oz sour cream
- 6 oz velveeta, cut up
- Ham steak, cut up
- 2 sliced green onions
- 1/4 cup parmesan cheese
Watermelon Salad with Rum and Mint

In a large bowl, whisk together lime juice, sugar, rum and salt
- 1/2 tsp finely grated lime zest plus 2 tblsp juice from the lime
- 2 tblsp light brown sugar
- 2 tblsp light rum
- 1/4 tsp salt
- 6 lb piece chilled seedless watermelon
- 2 tblsp slivered fresh mint leaves
Emily's Famous Sloppy Joes

In skillet, saute the ground beef for 5 min
- 1 lbs ground beef
- 1 chopped onion
- 6 oz can tomato paste
- 1 cup water
- 3 cloves garlic, minced
- 1 tblsp chili powder
- 1 tsp ground cumin
- 1 tsp white vinegar
- 1 tblsp brown sugar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
Ambrosia Fruit Salad

In a large bowl, combine all ingredients well and chill
- 1 8oz container cool whip, thawed
- 2 1/2 cups shredded coconut
- 1/2 cup chopped walnuts
- 1 8oz can fruit cocktail, drained
- 1 8oz can pineapple tidbits, drained
- 1 11oz can mandarin oranges, drained
- 3 cups mini marshmallows
- 1 10oz jar maraschino cherries, drained (optional)
- 1 tsp ground nutmeg
