Chipotle Mashed Potatoes

- 1 head garlic, roasted or garlic powder
- 2 1/2 lbs. russet potatoes, cut in 1" pieces
- 1 C. white cheddar cheese, shredded (I use cheddar)
- 4 oz. cream cheese
- 1/4 cup butter, at room temperature
- 1 1/2 tsp. chipotle pepper - minced
Chicken and Cheese Casserole

1. Heat oven to 375°F. In 8-inch square (2-quart) glass baking dish, mix chicken, corn, soup and cheese
- 2 cups cut-up cooked chicken
- 1 can (11 oz) Green Giant® Mexicorn® whole kernel corn with
- red and green peppers, drained
- 1 can (10 3/4 oz) condensed cream of chicken soup
- 2 cups shredded Monterey Jack cheese (8 oz)
- 1 2/3 cups Original Bisquick® mix
- 2/3 cup milk
Banana Macadamia Nut Bread

Heat oven to 350. In large bowl combine flour, sugar, butter, eggs, baking soda, salt, orange peel and vanilla

- 3/4 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tbsp. grated orange peel
- 1 tsp. vanilla
- 1 cup mashed ripe bananas (2 medium)
- 1/4 cup orange juice (not necessary)
- 1 cup flaked coconut (optional)
- 3 1/2 oz coarsely chopped macadamia nuts or walnuts (about 3/4 cups)

- 1/2 cup confectioner's sugar

Black Bean Tamale Pie with Cheese Crust

Heat oven to 375ºF. Grease 9-inch pie plate or casserole dish
- 1/2 pound ground lean beef
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup (16 oz) Thick & Chunky Salsa Medium
- 2 tablespoons Green Jalapenos Whole, minced
- 1 (8.5-ounce) package corn muffin mix
- 2 cups shredded sharp Cheddar cheese, divided
- 1/4 cup milk
- 1 large egg
- ripe olives, if desired
- additional salsa, if desired
- sour cream, if desired
Pear Bread Delight

Combine flour, soda, baking powder, salt and cinnamon in a large bowl
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 3/4 cup vegetable oil
- 3 eggs, slightly beaten
- 2 cups sugar
- 2 cups pears, peeled and grated
- 1 cup nuts, chopped (or less)
- 2 teaspoons vanilla
- sprinkle of brown sugar for topping (optional & yummy)
Tuscan Vegetable Soup

- 1 (15-ounce) can low-sodium canellini beans, drained and rinsed
- 1 tablespoon olive oil
- 1/2 large onion, diced (about 1 cup)
- 2 carrots, diced (about 1/2 cup)
- 2 stalks celery, diced, (about 1/2 cup)
- 1 small zucchini, diced (about 1 1/2 cups)
- 1 clove garlic, minced
- 1 tablespoon chopped fresh thyme leaves (or 1 teaspoon dried)
- 2 teaspoons chopped fresh sage leaves (or 1/2 teaspoon dried)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 32 ounces low-sodium chicken broth or vegetable broth
- 1 (14.5-ounce) can no salt added diced tomatoes
- 2 cups chopped baby spinach leaves (I substituted with Basil leaves)
- 1/3 cup freshly grated Parmesan, optional
- Italian sausage (if you want to add meat)
- Italian seasoning (optional)
Potato Soup

Cook first 5 ingredients with salt and pepper until potatoes are tender, about 10 minutes
- 6 cup cubed potatoes
- 2 cup water
- 1 cup sliced celery
- 1 cup diced carrots
- 2 tsp parsley flakes
- 1 tsp salt

- 1/4 cup flour
- 12 oz. shredded cheddar cheese

- 2 cups milk
- 6 cloves garlic
- 1 small onion, diced
- 2 cups Mozzarella cheese, shredded, divided
- 3 cups Cheddar cheese (reserve one cup)
- 1 1/2 cups Ranch dressing
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 tablespoon red pepper flakes
- 2 tomatoes, diced
Quick Refrigarator Pickles

This is a very quick and easy recipe, however, I do recommend waiting several days for the ingredients to merry
- 1/2 cup white vinegar, eyeball it
- 2 rounded teaspoons sugar
- 1 teaspoon mustard seed
- 1 teaspoon salt
- 1 clove cracked garlic
- 1 teaspoon dried dill or 2 tablespoons fresh dill leaves, chopped or snipped
- 1 bay leaf
- 4 kirby cucumbers, cut into 1-inch slices on an angle (I prefer spears)
