- 1 pound thin spaghetti, broke into 3-4" pieces
- 3 Roma tomatoes, diced
- 1 medium zucchini, diced
- 1 medium yellow zucchini squash, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 1 red onion, diced
- 1 cucumber, diced
- 2 (2.25 oz) cans sliced olives, drained
- 8 oz cheddar cheese, shredded
- 1 (16 oz) bottle Italian dressing (I prefer Olive Garden dressing)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/4 teaspoon garlic powder
- Topping:
- 1 teaspoon Salad Supreme or Johnny's Seasoning (optional)
Hula Chicken with Barbecue Sauce

- 1 box brown rice, prepared according to package directions (14 ounces)
- 4 boneless, skinless chicken breasts
- 8 slices deli ham
- 1-1 1/2 cups white cheddar cheese, shredded
- Salt and freshly ground black pepper

- 3 tablespoons extra virgin olive oil (EVOO), divided
- 1 medium red onion, finely chopped
- 2 cups fresh pineapple, chopped
- 3 tablespoons brown sugar
