Roasted Edamame Salad

- 12 ounces fresh or frozen shelled edamame, about 2 cups
- 1/2 cup fresh corn kernels, about 2 ears of corn
- 1/4 cup finely diced scallion
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup chopped fresh tomato
- 1/4 cup chopped fresh basil leaves
- 1 tablespoon red wine vinegar
Raspberry Fig Breakfast Bars

Preheat oven to 350F. In a small pot, combine the figs, water, and sweetener
- 3/4 cup dried figs, cut in half
- 1/2 cup water
- 1 tbsp dry sweetener
- 1 cup flour
- 2 cups rolled oat flakes
- 1/2 cup dry sweetener
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup olive oil
- 2 tbsp water
- 1/2 cup raspberry jam
Spinach Artichoke Dip

Defrost and drain the spinach well
- 1 package of organic frozen spinach
- 1 small onion
- 1 clove of garlic
- 1/3 to 1/2 red pepper (depending on taste)
- 1 and 1/2 16 oz packages vegan cream vegan cheese (Tofutti is good)
- 1/2 cup vegan mozzarella ( chopped and shredded)
- 3 to 5 artichoke hearts
- dash of garlic pepper
Vegan Banana French Toast

INSTRUCTIONS Mash banana in a large shallow bowl
- INGREDIENTS
- 1 just ripe banana (~1/2 cup mashed)
- 1 1/4 cups unsweetened almond milk
- 1/2 Tbsp flaxseed
- 1/4 tsp cinnamon
- 4-5 slices hearty wheat bread (Sturdy rustic breads do best here. If using sandwich-style bread, soak it for less time)
- Optional: 1/2 tsp vanilla extract, 1 Tbsp almond meal for texture, maple syrup/peanut butter for topping
Banana Cinnamon Smoothies

- 1 pint (2 cups) cherry tomatoes, halved
- 3 scallions, thinly sliced
- 1/3 cup pitted black olives, halved
- 1/3 cup chopped fresh flat-leaf parsley
- 2 tablespoons capers, rinsed and drained
- 1 tablespoon chopped fresh thyme leaves
- 1/4 cup extra-virgin olive oil
- 1 large lemon, zested
