Carrot-Ginger Dressing

Bring a medium pot of salted water to a boil
- 2 medium carrots, peeled and cut into 1/2-inch pieces (1 cup)
- 1 large shallot, chopped (1/4 cup)
- One 2-inch piece fresh ginger, peeled and chopped (3 tablespoons)
- 3 tablespoons vegetable oil
- 2 tablespoons seasoned rice vinegar
- 1 1/2 tablespoons soy sauce
- 1/4 cup water

1. Preheat a grill to medium or preheat the broiler
- 4 boneless, skinless chicken-breast halves
- 1/2 cup chopped onion
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon vegetable oil
- 2 teaspoons light brown sugar
- 2 teaspoons chili powder
- 1 teaspoon ground coriander
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground ginger
- 1 cup prepared peanut sauce

- 1/2 cup buttermilk
- 1 teaspoon baking soda

- 1 1/2 teaspoons cinnamon
- 2 cups flour
- 2 cups sugar
- ICING
- 1/4 cup butter
- 3 tablespoons cocoa

- 1 box powdered sugar

Place flour, cheese, salt and pepper in a large plastic zipping bag; mix well
- 1/4 c. all-purpose flour
- 1/4 c. grated Parmesan cheese
- 3/4 t. salt
- 1/8 t. pepper
- 6 potatoes, peeled and cut into wedges
- 1/3 c. butter, melted
- Garnish: fresh parsley, chopped

1. Scramble eggs with salt and pepper
- 3 eggs
- 1/8 teaspoon salt
- Coarsely ground black pepper
- 2 (3/4-ounce) slices Cheddar cheese
- 1 small Roma tomato, thinly sliced
- 1 small handful baby spinach leaves
- 2 slices cooked bacon
- 2 (3/4-ounce) slices provolone
- 4 slices sourdough bread
- 3 tablespoons prepared tomato basil sauce
- (or use marinara sauce and add 1 teaspoon chopped fresh basil), optional
