Craig's Peach Salsa

Mix and refrigerate
- 2 jars of Hannaford or Shaws salsa
- 4-5 plum tomatoes - cut to size
- 1/2 vidalla or white onion- cut to size you like
- 1/4 to 1/2 bunch of cilantro- according to look and taste
- 1 tsp minced garlic
- 1 can of sliced peaches with syrup- dice
- salt and pepper
- pinch of basil and oregano
- 3 drops of lime juice
Oven or Crocked Pot Prepared Carolina BBQ Pork

Remember to by bone in pork butt
- 1 bone in pork butt ( 5-7 pounds)
- 7 Tbsps of Cue Culture BBQ Seasoning mix
- 1 Tbsp of liquid smoke
- 1 med onion, sliced
- 1 cup water - Dutch oven only
- 1 bottle of your favorite Cue Culture BBQ sauce
- 1/2 cup bourbon
- 3 bay leaves
- BBQ sauce of choice for serving (optional)
Apple Pie

Prepare pie crust as directed on package for two-crust pie using 9 inch pie pan
- Filling:
- 1 pkg. Pillsbury Refrigerated Pie Crust
- 3/4 cup sugar
- 2 Tbsp. all- purpose flour
- 3/4 tsp. cinnamon
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1 Tbsp. lemon juice, if desired
- 6 cups ( 6 medium) thinly sliced peeled apples

Roasted Herbed Chicken with Lemon

Clean the chicken and pat dry
- 1 whole lemon
- 1 lemon, cut into wedges
- 2 tps fresh rosemary
- 10 cloves garlic
- 1/4 cup white wine or chicken broth
- 1 small pat butter or margarine, melted
- Small. red potatoes, cubed (qty as desired)
- Fresh green beans(qty as desired)
- Salt and pepper to taste
Wasabi Salmon

Heat 425 degrees. Line a shallow baking pan with foil
- 1/4 cup panko crumbs
- 1/4 cup wasabi-soy almonds,chopped
- 4 salmon fillets, 6 oz each
Five Bean Salad

Rinse beans thouroghly. Toss in remaining ingredients
- Five cans of beans ( black beans, dark red kidney, pinto beans, cut wax beans, cannellini)
- 1/3 cup balsamic vinegar
- 1/4 cup olive oil
- 3 Tbsp sugar
Baked Stuffed Shrimp

Boil shrimp for 10 minutes Cool Cut shrimp and stuff Bake for 10 mins or until warm
- 2 sticks of butter
- chopped onion
- green pepper
- celery
- minced clams
- ritz crackers
- Too dry - add milk
