Chicken with 40 Cloves of Garlic

Preheat the oven to 350 degrees
- 6 boneless, skinless chicken breasts, trimmed of any fat and in half
- 1-2 tbsp of olive oil
- Dried thyme to taste
- Sea salt and fresh cracked pepper to taste
- 40 cloves of garlic
- 1 tbsp of butter
- 1 tbsp flour
- 1 2/3 cups of chicken broth
- 2 tbsp 2% milk
- 1 tbsp fresh parsley, chopped
- Separate the cloves of garlic and peel.

- 5 cups fresh basil leaves, packed
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 1/2 cups good olive oil
- 1 cup freshly grated Parmesan
Corn Bread

Heat balck iron skillet with 2 tsp oil (bacon grease) and dust with 1 tsp or so of corn meal and let brown
- 1 cup corn meal
- 3 tbs flour
- 1 tsp salt
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 egg beaten
- 1 tsp sugar
- 1 cup buttermilk (more or less)
- Mix all ingredients and beat well.
French Mussel Bisque

- 1 (750-ml) bottle dry white wine, divided
- 3 pounds fresh mussels, cleaned
- 6 tablespoons (3/4 stick) unsalted butter
- 1 1/2 cups chopped yellow onion (2 onions)
- 1 large leek, white and light green parts, cleaned and chopped
- 2 carrots, chopped
- 4 teaspoons minced garlic (4 cloves)
- 1/2 teaspoon saffron threads
- Kosher salt and freshly ground black pepper
- 4 whole canned plum tomatoes, chopped
- 1 1/2 cups half-and-half
- 1 cup heavy cream
- 2 tablespoons minced fresh parsley or dill

- 4 garlic cloves, thinly sliced
- 2 lemons, thinly sliced
- Coarse salt and ground pepper

Roasted Red Saffron Peppers

Directions Heat the broiler
- 4 red bell peppers, (about 2 pounds total)
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, halved and cut into 1/4-inch-thick slices
- 2 garlic cloves, minced
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- 1/8 teaspoon saffron
- 2 tablespoons sherry vinegar
- 1/2 cup Nicoise olives, pitted
- Coarse salt and ground black pepper
- 2 tablespoons chopped fresh mint
Taco Seasoning-Homemade

- 1/2 cup chili powder
- 1/4 cup ground cumin
- 2 1/2 Tbsp. sea salt
- 2 1/2 Tbsp. black pepper
- 1 1/2 Tbsp. paprika
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. crushed red pepper flakes
- 2 tsp. dried oregano
Spinach Salad with Creamy Cucumber Dressing

- Puree:
- 1/2 c cucumber, seeded and chopped
- 1 shallot, chopped
- 2 T white wine vinegar
- 1 t sugar
- Pinch red pepper flakes
- Stir in
- 2 T plain yogurt
- 2 T mayo
- salt and pepper to tasted
- Drizzle over:
- 2 cups fresh spinach leaves
- 1/4 cup radishes thinly slice
- homemade crutons
