Roasted Pork Tenderloin with Apple Chutney

Rinse pork and pat dry. Place in shallow bowl
- 2 1- to 1 1/4-pound trimmed pork tenderloins
- 1/2 cup apple cider
- 1/2 cup dry red wine
- 1 cup purchased apple chutney
- 2 garlic cloves, chopped
- 2 tablespoons fresh thyme leaves plus sprigs for garnish
- 2 tablespoons olive oil
- ** If you can't find apple chutney try using some mango chutney. You can heat it on the stove and mix in chopped pieces of apple.
Bite Sized Fish Tacos

Delish little tacos great for parties
- Wonton cups:
- 12 (3 1/4 by 3 1/4-inch square) wonton wrappers*
- 1/4 cup canola or vegetable oil
- Filling:
- 3 tablespoons olive oil, plus more for drizzling
- 3 tilapia fillets (about 8 ounces total), cut into 3/4-inch pieces
- Kosher salt and freshly ground black pepper
- 1 avocado, halved, pitted and flesh cut into 1/2-inch cubes
- 1 mango, peeled and flesh cut into 1/2-inch cubes
- 3 green onions, finely chopped
- 3 cups coarsely chopped baby arugula
- Dressing:
- 3 tablespoons olive oil2 tablespoons fresh lime juice (from about 2 limes)
- Kosher salt
- Creme fraiche:
- 1/2 cup creme fraiche
- 1 tablespoon wasabi powder*
- 1/4 teaspoon kosher salt
Dark Chocolate Crisps with Raspberry cream

- 1 cup cream
- 1-2 tsp. powdered sugar
- 1-2 tsp. vanilla paste
- 1/2 cup raspberries, fresh or frozen
- 1-2 tsp orange liquor (optional)

Hot Saucy Venison

Cut venison across grain in thin slices about 1 1/2 long
- Marinade:
- 1 lb. venison round steak
- 1 large green pepper cubed
- 1 medium onion cut into 1/8" wedges
- 2 whole chilies
- 4 . Tbl oil
- 1 1/2 Tbl soy sauce
- 2 tsp sherry
- 1 Tbl cornstarch
- 1/8 tsp white pepper
- Cooking sauce:
- 1 Tbl minced ginger
- 1 Tbl minced garlic
- 1 Tbl sweet bean sauce or hoisin
- 2 Tbl soy sauce
- 2 Tbl sherry
- 1 tap vinegar
- 1 tsp sugar
- 1 tsp cornstarch
Bean Dip

Mix all together except for 1/2 cup of cheese, saving for the top
- 1 can jalapeno bean dip
- 8 oz. cream cheese, softened
- 3/4 pt. sour cream
- 2 Cups cheddar cheese
Coq a vin cooking style for fondue

Whisk all ingredients until smooth
- 3 3/4 c warm water
- 1 1/2 c burgundy
- 3/4 c thinly sliced button mushrooms
- 1/4 c chopped scallions
- 3 tbsp finely chopped onions
- 2 tbsp garlic
- 1 tbsp super finely chopped celery
- 1 tbsp finely chopped carrot
- 2 tbsp kosher salt
