Company Chicken Casserole by domesticdiva

Cook noodles according to package directions, in boiling water until barely tender
- 1 pkg (8oz) noodles
- 3 cups cooked chikcken, diced
- 1/2 cup celery, diced
- 1/2 cup green pepper, diced
- 1/2 cup onion, diced
- 1 can (4oz) sliced mushroom, drained
- 1 jar grated parmesan cheese
- 1 cup grated sharp process cheese
- 1 can (10-3/4 oz) cream of chicken soup
- 1/2 cup chicken broth
- 1-1/2 cup small curd cottage cheese
- 2 tbsp. butter melted
- 1/2 tsp leaf basil
Basic Pasta from scratch

Put the flour in a large bowl, make a well in the center, and add the eggs
- 1 1/2 lbs flour
- 6 fresh ranch eggs
Montana Elk Stew

- 1 pound Elk steak cut up into 1" cubes
- 1-2 cups Flour
- 1 stick Butter
- 1 onion
- 2 stalks celery
- 1 can Swansons vegetable broth
- Water
- Vegetables of your choice ( carrots, potatoes, rutabagas, parsnips etc.)
Leek and Goat Cheese Tartlets

Easy-peasy and so delish. Simple really good tartlets made with puff pastry
- 1 frozen tart shell (large) or
- 12 miniature tartlet shells or
- 1/2 package puff pastry, thawed
- 2 leeks
- 1-2 T. butter
- 1/2 cup white wine
- Sea salt
- Fresh ground pepper
- 3 eggs
- 3/4 cup cream
- 4 oz. goat cheese
Melting Pots French onion swiss fondue

Toss cheese with flour in a bowl Place a metal bowl over a sauce pan filled with 2" of water

- 3 1/2 c shredded swiss cheese
- 2 tbsp all purpose flour
- 1 c beef stock, prepared using Minors beef base
- 1/2 c onion relish ( recipe below)
- 2 tsp finely chopped garlic
- 1/4 Worcestershire sauce
- 2 tsp freshly ground pepper
- 2 tbsp chopped scallions
- 1 c finely chopped white onion
- 1 tsp chopped garlic
- t tsp butter
- 1 c red wine"

- 2 3/4 cups (11 ounces) shredded cheddar cheese
- 3 tablespoons all-purpose flour
- 1 cup beer (light beer recommended)
- 4 teaspoons prepared horseradish
- 4 teaspoons dry mustard
- 2 teaspoons Worcestershire sauce
- 1 tablespoon bourbon
- 2 tablespoons chopped cooked bacon

Mushroom & Spinach Rotolo

These are like a deconstructed lasagna roll
- Filling:
- 1 package frozen spinach, thawed
- 6 medium portobello mushrooms, sliced
- 1 clove garlic, chopped
- A handful of ricotta cheese and a handful of grated Parmesan
- For the roast pepper and tomato sauce:
- 2 large onions, finely chopped
- 4 cloves garlic, diced
- 3 carrots, peeled and diced
- 1 large tin chopped tomatoes
- 3 roasted peppers, skins and seeds removed. Or 1 jar fire-roasted peppers from Trader Joe's
Left over turkey stew

- 1 lb shredded turkey or chicken
- 1 can red beans
- 1 can green chilies
- 1 can corn
- 1 can chicken stock
- 1 can spicy chicken soup/ Mexican chicken soup works too
- 1 green pepper
- 1 red pepper
- 1 yellow onion
- cheddar cheese
- fritos
- black olives
- Taco seasoning
Dill Fettuccine with Salmon & Vodka Sauce

Throw the dill into the pasta dough recipe
- 1 large bunch of dill, de-stemmed and chopped
- 1/2 a sweet onion, like Vidalia or Walla-Walla. Shallots or red onion will do
- 1/2 a pound of smoked salmon, flaked
- 1/2 a pint of cream
- 1 shot of vodka
