Instructions Preheat oven to 325 degrees
- 1 cup pumpkin puree (if using canned, make sure it’s 100% pure pumpkin and not pie filling)
- 1 1/2 tbsp ground cinnamon
- 2 tsp ground ginger
- 1/3 cup vegetable oil
- 1/2 cup brown sugar
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp salt
- 5 cups old fashioned large flake oats
- 2 cups natural almonds
- 1/4 cup flaxseeds
- 2 cups dried, sweetened cranberries

- Ingredients:
- 1 1/4 cups canned* chickpeas, well-rinsed and patted dry with a paper towel
- 2 teaspoons vanilla extract
- 1/2 cup + 2 tablespoons (165 grams) natural peanut butter (can use PB2 from gym to make healthier, check your labels)
- 1/4 cup (80 grams) honey (agave would be amazing too!)
- 1 teaspoon baking powder**
- a pinch of salt if your peanut butter doesn’t have salt in it
- 1/2 cup (90 grams) chocolate chips
Italian Summer Casserole

Preheat oven to 400. In a large skillet, brown sausage and add sauce
- 3/4 pound sweet Italian sausage
- 1 jar of your favorite pasta sauce
- 2 cups cooked brown rice
- 2 medium zucchini, cut into long thin strips (with a knife, mandolin or vegetable peeler)
- 2 tablespoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese

To prepare cake: Preheat oven to 350°F
- 1 20-ounce can crushed pineapple
- 2 cups whole-wheat pastry flour
- 2 teaspoons baking soda
- 1 ⁄2 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 large eggs
- 11 ⁄2 cups granulated sugar
- 3 ⁄4 cup nonfat buttermilk (see Tip)
- 1 ⁄2 cup canola oil
- 1 teaspoon vanilla extract
- 2 cups grated carrots (4-6 medium)
- 1 ⁄4 cup unsweetened flaked coconut
- 1 ⁄2 cup chopped walnuts, toasted
- FROSTING
- 12 ounces reduced-fat cream cheese (Neufchâtel), softened
- 1 ⁄2 cup confectioners’ sugar, sifted
- 11 ⁄2 teaspoons vanilla extract
- 2 tablespoons coconut chips or flaked coconut, toasted

Rinse the quinoa thoroughly in a mesh strainer or sieve, drain

- Pico de gallo or salsa
- Diced seeded tomatoes
- Hot sauce or sriracha
- Sliced avocado

To Make Pancakes Add: 1 1/2 cups mix 1 cup water 2 Tbsp oil 1 egg Mix together
- Pancake Mix:
- 2 cups whole wheat flour
- 3 cups white flour
- 1 1/4 cup powdered milk
- 1/4 cup sugar
- 1/8 Cup baking powder
- 1 Tbsp salt
- Mix together with a whisk and store in an airtight container for up to 3 months.
