Bring 3 cups water to a boil in a medium-sized heavy saucepan
- 1 * 1 cup uncooked instant polenta
- 2/3 * 2/3 cup grated Parmesan, divided
- 1/8-1/4 * 1/8-1/4 teaspoon cayenne pepper
- * Vegetable oil cooking spray
- 2 * 2 cloves garlic, chopped
- 2 * 2 tablespoons chopped fresh thyme (or oregano) or 1 tbsp dried
- 1/4 * 1/4 cup fresh lemon juice
- 1 * 1 tablespoon olive oil
- 8 * 8 asparagus stalks, ends trimmed
- 8 * 8 scallions, trimmed
- 2 * 2 small Japanese or Italian eggplants, trimmed and halved
- 1 * 1 medium-large yellow squash (about 1/2 lb), cut into 1/3-inch-thick slices
- 1 * 1 cup cherry tomatoes
- Sauce
- 1 * 1 jar (12 oz) prepared roasted red peppers, drained
- 1/3 * 1/3 cup vegetable (or chicken) broth
- 1 * 1 large clove garlic, chopped

- 2 tablespoons vegetable oil
- 1/2 onion, thinly sliced
- 2 tablespoons finely chopped garlic
- 2 tablespoons finely chopped fresh ginger
- 1 8 ounce package dried lo mein noodles
- 1 small head cabbage, thinly sliced (3 cups)
- 1 small red bell pepper, thinly sliced lengthwise
- 1/4 pound shiitake mushrooms, stems discarded and caps thinly sliced
- 1/3 pound snowpeas, trimmed and halved crosswise
- 1 carrot, peeled and cut into matchsticks
- 1/4 cup plus 2 tbsp soy sauce
- 3 tablespoons dry sherry
- 1 tablespoon toasted sesame oil
- 2 cups cooked chicken, sliced into bite-size pieces

Honey Chipotle Chicken Crispers

Preheat oven to 400. Pour melted butter onto a large baking sheet and brush to coat entire surface
- 3-4 boneless skinless chicken breasts, pounded to 1/2 inch thickness and sliced into strips
- 1 cup flour
- 2 cups panko bread crumbs
- 1 teaspoon each salt and pepper
- 2 eggs, lightly whisked
- 8 tablespoons butter, melted

- 1/3 cup honey
- 1/2 cup sugar
- 2 teaspoons chipotle adobo sauce (the sauce that chipotle peppers are packed in inside the can! These can be found in the latino section at the market near the canned jalapeños.)
- 1 tablespoon hot sauce (I used Franks)
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 cup ketchup
- 1 tablespoon white vinegar
- 1/3 cup cold water + 2 tablespoons corn starch
- optional: ranch dressing for dipping
