Mahogany Beef Stew with Red Wine

Heat 2 tablespoons oil in heavy large pot over high heat
- 4 tablespoons olive oil
- 3 1/2 pounds boneless beef chuck roast, trimmed, cut into 2 1/2-inch pieces
- 3 1/2 cups chopped onions
- 2 cups Cabernet Sauvignon
- 1 14.5-ounce can diced tomatoes with Italian herbs, undrained
- 1/2 cup hoisin sauce*
- 2 bay leaves
- 1 pound slender carrots, peeled, cut diagonally into 1-inch lengths
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- 2 tablespoons chopped fresh parsley
Shepherd's Pie

Cook potatoes according to package directions
- 1 (22 oz.) pack frozen mashed potatoes
- 1 lb. ground beef
- 1 onion, chopped
- 1/2 c. frozen sliced carrots, thawed
- 2 T. flour
- 2 t. salt, divided
- 1/2 t. pepper, divided
- 1 c. beef broth
- 1 large egg, beaten lightly
- 1/2 c. cheddar cheese
Sausage Breakfast Casserole

Cook sausage over medium heat until done, stirring to crumble well
- 1 pound bulk sausage
- 6 slice white bread, crust removed
- 1-1/2 cups shredded longhorn cheese
- softened butter or margarine
- 5 eggs
- 2 cups half and half
- 1 teaspoon salt
- 1 teaspoon dry mustard
Slow Cooked Pork Tenderloin

Sprinkle tenderloins with steak seasoning and rosemary
- 1 package of plain pork tenderloins, rinsed and drained
- Montreal steak seasoning
- rosemary
- water
- rice
- onions
- peppers
- egg
Pennsylvania Red Cabbage

Heat bacon drippings and saute red cabbage until warm
- 2 T. bacon drippings
- 4 c. shredded red cabbage
- 2 c. cubed unpared apple
- 1/4 c. brown sugar
- 1/4 c. vinegar
- 1/4 c. water
- 1/4 t. salt
- 1/2 t. caraway seeds
Chicken and Wild Rice Salad

Mix vinaigrette ingredients together
- Vinaigrette
- 1/3 c. sherry wine vinegar
- 1 garlic clove, minced
- 1 t. Dijon mustard
- 1 t. sugar (may need more)
- 2/3 c. olive oil (may need less)
- 3-4 chicken breasts, cooked and shredded
- 2 c. Wild Rice (cooked in chicken broth)
- 1/2 - 1 c. coarsely grated peeled carrots
- 1/2 c. chopped green onions
- 1/2 - 1 c. chopped celery
- 1/3 c. chopped toasted nuts (almonds, walnuts or pecans)
- 1/3 c. (packed) dried fruit (golden raisins, cherries, cranberries)
- 2 T. fresh herbs (tarragon, dill or parsley)
Pizza Dip Appetizer

Combine first 9 ingredients and heat on top of stove until cream cheese melts
- 1 8 oz. cream cheese
- 1/2 cup sour cream
- 1/2 medium Green pepper, chopped
- 1 small onion, chopped fine
- 3/4 cup pepperoni, chopped fine
- 1 teaspoon oregano
- 1/8 teaspoon crushed red pepper
- 1/2 cup pizza sauce
- 1/4 teaspoon garlic powder
- 1/2 cup shredded mozzarella cheese
Carrot Cake

Directions 1.Preheat oven to 350 degrees F (175 degrees C)
- 4 eggs
- 1 1/4 cups vegetable oil
- 2 cups white sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 cups grated carrots
- 1 cup chopped pecans
- 1/2 cup butter, softened
- 8 ounces cream cheese, softened
- 4 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans (substitute black walnuts)
Big Soft Ginger Cookies

Preheat oven to 350 degrees F (175 degrees C)
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup margarine, softened
- 1 cup white sugar
- 1 egg
- 1 tablespoon water
- 1/4 cup molasses
- 2 tablespoons white sugar
Sweet Corn Relish with Cilantro

In a medium bowl, combine the onion, jalapeno, lime juice, vinegar and a generous pinch of salt
- 2-1/2 c. corn
- 1 small red onion, cut into 1/8 dice
- 1/2 fresh jalapeno, cored, seeded and minced
- 3 T. fresh lime juice, more to taste
- 1 t. Champagne vinegar or white -wine vinegar
- Kosher salt to taste
- 1/2 avocado, pit removed and diced
- 1/3 c. fresh cilantro, chopped
- 3 T. olive oil
