Pecan Pie Squares

Heat oven to 350F. Grease jelly roll pan (15 1/2 x 10 1/2 x 1)
- 3 c flour
- 1/4 c plus 2 T sugar
- 3/4 c butter, softened
- 3/4 tsp salt
- 4 eggs slightly beaten
- 1 1/2 c sugar
- 1 1/2 light or dark corn syrup
- 3 T butter, melted
- 1 1/2 tsp vanilla
- 2 1/2 c chopped pecans
Toasty Pecan Pie

Combine syrup, sugar, eggs, vanilla, and salt
- 1 c light corn syrup
- 1/2 c light brown sugar
- 3 eggs, unbeaten
- 1 tsp vanilla
- 1/4 tsp salt
- 1 c pecans
- 1 (8 inch) pie shell
Philly Cheesecake Brownies

Prepare brownie mix as directed
- 1 (19.8 oz) package fudge brownie mix
- 1 (8 oz) package cream cheese
- 1/3 c sugar
- 1 egg
- 1/2 tsp vanilla
Dried Cherry Scones

Combine first 5 ingredients in a bowl; cut in margarine with pastry blender until mixture resembles course meal
- 2 c flour
- 1/4 c plus 3 T sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 c chilled margarine, cut into small pieces
- 1/2 c dried tart cherries
- 1/2 c nonfat buttermilk
- 1 tsp vanilla
- 1/4 tsp almond extract
- 1 egg lightly beaten
Spiced Pumpkin Cake

Pumpkin cake with molasses
- 1 cup (2 sticks) unsalted butter, at room temperature
- 3 cups all-purpose flour
- 5 tsp pumpkin pie spice
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 15-ounce can pumpkin puree (1 1/2 cups)
- 1/2 cup milk
- 1/4 cup molasses
- 1 1/4 cup confectioners' sugar
- 2 Tbsp milk (or lemon juice)
Blueberry-Lemon Bread

Preheat oven to 325 F. Butter 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan
- 1 1/2 c flour
- 1 tsp baking powder
- 1/4 tsp salt
- 6 T (3/4 stick) butter, room temperature
- 1 1/3 c sugar
- 2 large eggs
- 2 tsp grated lemon peel
- 1/2 c milk
- 1 1/2 c blueberries fresh or frozen (thawed and drained)
- 3 T fresh lemon juice
Traditional Chex Party Mix

Preheat oven to 250 F. Heat butter in large shallow roasting pan (about 15x10x2) in oven until melted
- 1/2 c (1 stick) butter
- 1 1/4 tsp seasoned salt
- 4 1/2 Worcestershire sauce
- 2 2/3 c Rice Chex cereal
- 2 2/3 c Wheat Chex cereal
- 2 2/3 c Corn Chex cereal
- 1 c salted nuts
Cold Peanut Noodles with Mixed Vegetables

Toss noodles with spinach, cucumber, carrot, green onion and chick peas
- 3/4 c cooked ramen noodles
- 1 c raw spinach
- 1/2 c chopped cucumber
- 1 small carrot, grated
- 1 chopped green onion
- 1/4 c canned chick peas
- 2 tsp peanut butter
- 1 T teriyaki sauce
- 1/2 minced garlic
Spicy Brown Rice and Beans

Mix all ingredients together and microwave on high for one minute
- 1 c brown rice, cooked
- 1/2 c black beans
- salsa to taste
Velveeta Salsa Dip

Microwave 5 minutes. Or saucepan 10 minutes
- 1 pound Velveeta
- 8 oz jar salsa
