- 200 gm ginger, old or young
- 2 bottles (600ml each) sweetened black vinegar (I used Pat Chun sweetened vinegar)

1 Preheat the oven to 350 F
- 1 cup of unsalted butter, room temperature
- 1 cup of sugar
- 1 cup of dark brown sugar, packed
- 2 eggs
- 2 tablespoons of milk
- 2 teaspoons of vanilla extract
- 2 1/2 cups of flour
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1 teaspoon of kosher salt (regular salt will suffice)
- 1 cup of rolled oats
- 1 1/2 cups of coarsely chopped pistachios, raw and unsalted
- 1 1/2 cups of white chocolate chips
COOKIES - Pineapple Tart 1

Pineapple Filling: Skin pineapples and remove the “eyes”
- Pineapple Filling:
- 2 half-ripe pineapples, grated
- 200 g granulated sugar (adjust according to your preference)
- 4 cloves
- 1 cinnamon stick (5 cm long)
- 1 tbsp lemon juice
- Pastry:
- 250 g unsalted butter (at room temperature)
- 50 g icing sugar
- 2 egg yolks
- 360 g plain flour mixed with 2 tbsp corn flour (sifted)
- 1/4 tsp salt
- Pineapple filing (Take 6g or 1/2 tsp heapful of filling and shape into a small elongated roll).
- Egg wash – 1 egg yolk + 1 tbsp milk
PASTA - Creamy Cajun Chicken Penne Pot

Heat a large pot or skillet over medium-high heat
- 1 pound boneless, skinless chicken thighs, cut into chunks
- 3 tablespoons cajun seasoning
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter
- 1 sweet onion, diced
- 1 red bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 12 ounces sliced mushrooms
- 4 garlic cloves, minced
- 1 cup low-sodium chicken stock
- 2/3 cup heavy cream
- 2 cups whole wheat penne (or whatever you want) pasta, cooked
- 3 to 4 tablespoons fresh chopped parsley

- 300 g margarine (i used unsalted butter and add 1/4 tsp of salt)

- 200 g all purpose flour
- 25 g corn flour

- 1/4 tsp vanilli powder

Combine flour, baking soda, baking powder and salt, set aside
- 2 cups minus 2 tablespoons(8 1/2 ounces) cake flour
- 1 2/3 cups (8 1/2 ounces) bread flour
- 1 1/4 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons coarse salt
- 2 1/2 sticks (1 1/4 cups) unsalted brown butter
- 1 1/4 cups (10 ounces) light brown sugar
- 1 cup plus 2 tablespoons (8 ounces) granulated sugar
- 2 large eggs
- 2 teaspoons natural vanilla extract
- 1 1/4 pounds bittersweet chocolate chopped into chip size pieces
BREAKFAST - Bacon and Cheese Egg McMuffin Cups

- 6 slices ready cooked bacon, not microwaved, just right out of package
- 1/2 Cup shredded cheddar cheese
- 6 large eggs
- Pinches of kosher salt and fresh cracked black pepper

Prepare the Top Hats shells
- Shells:
- 100 g All Purpose Flour, sifted
- 50 g Corn Flour
- 110 g Rice Flour
- 1/2 tsp Salt
- 2 Eggs, lightly beaten
- 400 ml Water
- Oil for deep frying
- Filling:
- 1 kg Yam Bean (Jicama), shredded
- 300 g Carrots, shredded
- 5 Shallots, sliced
- 250 g Prawns, shelled and chopped
- 2 Tbsp Peanut Oil
- 2 tsp Sugar
- Sea salt to taste
- 2 Eggs, lightly beaten
- 3 stalks Scallions
- 3 Red Chillies, finely sliced
BREAD - Ensaymada (Filipino Sweet Pastry)

1. Mix all dry ingredients, except salt, mix well 2

- 500 g high protein flour
- 100 g of sugar
- 100 g of butter
- 11 g instant yeast
- 1/2 tsp bread improver
- 4 egg yolks
- 225 ml ice water
- 1/2 tsp salt
- 1/4 cup melted butter
- 1/4 cup sugar
- 1 cup cheddar cheese = grated
