CAKE - Chocolate Cake with Peanut Butter Frosting

CAKE: 1. Preheat the oven to 175 degrees C and prepare three 8-inch cake pans with butter and parchment 2
- CAKE:
- 2 cups all-purpose flour
- 2 1/2 cups sugar
- 3/4 cup unsweetened cocoa powder, preferably Dutch process - valrhona
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup neutral vegetable oil - i used corn oil
- 1 cup sour cream (didnt hv so i used 1 cup double cream + 1 tbsp lemon)
- 1 1/2 cups water
- 2 tablespoons distilled white vinegar
- 1 teaspoon vanilla extract
- 2 eggs
- Peanut Butter Frosting:
- Makes about 5 cups
- 10 ounces cream cheese, at room temperature - i used 250g
- 1 stick (4 ounces) unsalted butter, at room temperature
- 1/2 teaspoon vanilla extract
- 5 cups powdered sugar - sifted
- 2/3 cup smooth peanut butter - i used skippy reduced fat ha!!
- Chocolate-Peanut Butter Glaze:
- Makes about 1 1/2 cups
- 8 ounces semisweet chocolate, coarsely chopped
- 3 tablespoons smooth peanut butter
- 2 tablespoons light corn syrup

Make the phyllo tubes: Center an oven rack and preheat the oven to 350F
- For the phyllo tubes:
- 3 3 3 phyllo sheets
- 3 3 3 tbsp unsalted butter, melted
- 3 3 About 3 tbsp granulated sugar

- For the cheesecake:
- 1 1 1 lb cream cheese, at room temperature
- 2/3 2/3 2/3 cup granulated sugar
- 1 1/2 1 1/2 1/2 tbsp flour
- 1/8 1/8 1/8 tsp salt
- 1 1 1 tbsp. lemon juice
- 1 1 1 tsp. pure vanilla extract
- 2 2 2 large eggs, at room temperature
- 2/3 2/3 2/3 cup heavy cream
- For the mousse:
- 1 1/4 1 1/4 1/4 cups heavy cream
- 1 1 1 oz fresh mint leaves, coarsely chopped
- 6 6 6 oz good quality white chocolate, finely chopped
- 1/4 1/4 1/4 cup water
- For the strawberry gelée:
- to 1 gelée I used this recipe but decreased the sugar to 1 tbsp because the roasted berries were already slightly sweetened.
- For finishing:
- 1/2 1/2 1/2 cup lightly toasted pistachio nuts, coarsely ground
- Fresh mint leaves for decoration
SNACKS - Almost-Famous Bloomin' Onion

Combine all of the dip ingredients in a bowl, cover and refrigerate
- For the dip:
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 1/2 teaspoons ketchup
- 1/2 teaspoon Worcestershire sauce
- 1 tablespoon drained horseradish
- 1/4 teaspoon paprika
- Pinch of cayenne pepper
- Kosher salt and freshly ground black pepper
- For the onion:
- 1 large sweet onion, such as Vidalia (about 1 pound)
- 2 1/2 cups all-purpose flour
- 1 teaspoon cayenne pepper
- 2 tablespoons paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Freshly ground black pepper
- 2 large eggs
- 1 cup whole milk
- 1 gallon soy or corn oil
- Kosher salt
SALAD: Arugula Salad

1. I made a quickie salad dressing out of a few of my favorite flavors
- Dressing (or use your own recipe):
- 1 large mango, cubed
- 1 avocado, diced
- 3/4 cup macadamia nuts, roasted/salted
- 5 cups fresh arugula
- optional add-in's: sweet onions, diced apple, diced pineapple ... more
- 1/4 cup lemon juice
- 2 Tbsp apple cider vinegar
- 1/4 cup olive oil
- 1 Tbsp Dijon mustard
- 1 tsp agave syrup
- pepper
- dash garlic powder
PORK - Pan Fried "Roast" Pork 煎烧肉

To fry (whole process may take 20-30 minutes) 1
- 500 gm pork belly, skin on, preferably the middle cut from a big piece of belly.
- Lower rub (combine)
- 1/2 tsp garlic salt
- 1/2 tsp 5 spice powder
- 1/3 tsp salt
- 1/4 tsp white pepper powder
- 1/2 Tbsp shao xing wine
- Top rub
- 1/2 Tbsp salt
- Marinate
- 1 . Place belly skin side down and sprinkle the mixed seasonings over and pat them in.
- 2 . Flip over and sprinkle salt over and make sure the salt is evenly dispersed on the skin.
- 3 . Let it sit in the fridge for 2-3 days, uncovered.
CAKE - Sweetened Condensed Milk Pound Cake

1. Sift cake flour and baking powder tog
- 120 gm good quality butter
- 45 gm sugar
- 1/4 tsp salt (I omitted this, because I used salted butter)
- 1/2 cup condensed milk
- 1 1/2 tsp vanilla paste (I used essence)

TART - Ham and Potato Bake

Preheat oven to 180 degrees Celsius (160 degrees Celsius fan-forced)
- We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.
- 600 g (about 3 large) potatoes
- 75 g (1 cup) grated tasty cheddar cheese
- 44 g (1/2 cup) grated parmesan cheese
- 150 g shaved ham, finely chopped
- 1/2 medium onion, grated
- 4 large eggs (we use eggs with a minimum weight of 59g)
- 250 ml (1 cup) cream
- Salt and pepper
