Pecan Pie

Blend eggs, sugar, salt, syrup and butter with mixer
- 3 eggs
- 2/3 c sugar
- 1/2 t salt
- 1/2 c butter or oleo, melted
- 1 c Dark corn syrup
- 1 c pecan halves
Hot Chicken Salad

Mix tog. top ingredients. Add on top, 1 cup grated cheese, top w/ crushed potato chips
- 4 c chicken
- 2 c sliced celery
- 1 c mayo
- 1 bottle cashew nuts
- chips
- grated cheese
chestnut and bacon dressing

Preheat oven to 325 and butter a 4 qt
- 6 c torn bite-sized piece crusty country- style read (about 1/2 lb)
- 6 bacon slices, chopped
- 1/2 stick (1/4 c) unsalted butter
- 2 onions, chopped
- 4 celery ribs, chopped
- 1 T fresh rosemary leaves, minced
- 1 lb fresh chestnuts, shelled and peeled and choped coarse or 3/4 lb vacuum-packed whole chestnuts, chopped coarse (about 2 c)
- 1/2 c packed fresh flat-leafed parsley leaves, washed, spun dry, and minced
- 2 c turkey giblet stock or chicken broth
Praline Sweet Potatoes

1. Wash and peel potatoes; cut into quarters
- 4 med sweet potatoes or yams (1 1/2 lbs.)
- 1/2 to 3/4 c granulated sugar
- 1/4 c butter, melted
- 1/4 t salt
- 1/2 c evaporated milk
- 2 beaten eggs
- 1/4 c packed brown sugar
- 2 T all-purp flour
- 1 T butter, melted and cooled slightly
- 1/4 c chopped pecans
Guacamole

1. Cut avo. in half, squeeze out pit & scoop the fruit into a bowl
- Avocadoes (based on # of people in the group)
- 1/4 About 1/4 t of salt per avocado
- 2 About 2 T salsa per avocado
- 3/4 About 3/4 t garlic powder per avocado
- 1/2 About 1/2 t lemon or lime juice per avo.
- Optional- chopped cilantro, chopped onions
Peppermint Hot Fudge Sundaes

1. Combine heavy cream and corn syrup in a small saucepan
- 1 c heavy cream
- 1/3 c light corn syrup, plus more to adjust consistency
- 1 12 oz. bag semisweet choco chips
- 1 t peppermint extract
- vanilla ice cream
- peppermint candy, coarsely chopped
Pumpkin Pie Squares

1. Mix first 4 ingredients in mixing bowl
- 1 c sifted flour
- 1/2 c quick cooking rolled oats
- 1/2 c brown sugar, firmly packed
- 1/2 c buter or margarine
- 1 (1 lb) can of pumpkin
- 1 13+ oz can of evaporated milk
- 2 eggs
- 3/4 c sugar
- 1/2 t cinnamon
- 1/2 t ground ginger
- 1/4 t ground cloves
- 1/2 c chopped pecans
- 1/2 c brown sugar firmly packed
- 2 T butter or margarine
Double Apple Walnut Bread

1. Line a 9 x 5 in loaf pan with waxed or parchment paper (or grease and flour it), then set it aside
- 1 c smooth unsweetened applesauce
- 1/2 c sugar, plus 1 T for sprinkling
- 1/2 c packed light brown sugar
- 2 L eggs
- 1/4 c canola or veggie oil
- 1/4 c plain yogurt
- 1 t vanilla extract
- 2 c flour
- 1 t baking powder
- 1/2 t baking soda
- 3/4 t salt
- 1/2 t cinnamon
- 1/8 t nutmeg
- 1 c peeled, cored, and finely diced apple
- 1/2 c chopped walnuts
Fresh Cranberry orange sauce

With a vegetable peeler remove three 3-in-long strips zest from 1 orange
- 2 L navel oranges
- 12 oz. bag fresh or untawed frozen cranberries, picked over (about 3 1/2 c)
- 3/4 c honey
Beer Cheese Soup

Cook bacon in skillet over med
- 1/4 lb. bacon, diced
- 1/2 c chopped onion (can use less)
- 8 c milk, divided
- 4 T granulated chicken bouillon
- 1 1/2 t Worcestershire sauce
- 3/4 t hot pepper sauce
- 1 1/3 c (6 oz.) cornstarch
- 1 (16 oz.) jar pasteurized processed cheese spread
- 1 (12 oz.) can beer such as Coors
- Minced fresh parsley, for garnish
