Carrot-Pineapple Roast Dinner

In Slow cooker place carrots and meat which has been cut in half to fit in cooker atop carrots
- 3-4 pound chuck roast trimmed
- 1 cup carrots
- 8 1/4 ounces canned crushed pineapple undrained
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 clove garlic minced
- 1/2 teaspoon dried basil crushed
Chicken Breasts in Creamy Mustard Sauce

Heat margarine in 10-inch skillet over medium heat
- 2 tablespoons butter or margarine
- 4 skinless boneless chicken breast halves
- 1/4 cup onion finely chopped
- 1 cup heavy whipping cream
- 2 tablespoons fresh parsley chopped
- 2 tablespoons Dijon mustard
- 1/4 cup orange marmalade
Chicken Diablo

Add milk slowly to soup. Heat and stir until smooth
- 1 cup egg noodles cook and drain
- 1 cup milk
- 1 can cream of mushroom soup
- 1 can French fried onion rings
- 2 cups cooked chicken cubed
Chicken Piccata

Pound chicken until thin. Dredge chicken breasts in flour
- 6 chicken breast halves without skin or bone
- 1/4 cup flour
- 1/4 cup butter or margarine
- 1 tablespoon olive oil
- 3/4 cup chicken broth
- 1/3 cup lemon juice (2 lemons)
- 1 teaspoon lemon peel grated
- 1/2 teaspoon salt
- pepper to taste
- 1 tablespoon butter or margarine
- 3 tablespoons parsley snipped
Cocktail Sauce

Combine all ingredients and chill
- 1 1/2 cups catsup
- 1 tablespoon lemon juice
- 1 tablespoon Worcestershire sauce
- 2 tablespoons creamy horseradish
- 1 1/2 teaspoons sugar
- 3 dashes Tabasco sauce
- salt and pepper to taste
Coffee Almond Tortoni

In a small bowl, beat egg white until foamy
- 1 egg white
- 6 tablespoons sugar
- 1 cup heavy cream
- 1 teaspoon instant coffee
- 1 teaspoon vanilla
- 1/8 teaspoon almond extract
- 1/2 cup slivered almonds toasted

- 4 cups corn cut from cob (about 8 ears)
- 1/4 cup butter or margarine melted
- 1/2 cup half and half
- 1/2 teaspoon salt
- pepper, to taste
Crab Bernardo

- 4 boneless chicken breasts pounded thin
- 1 cup mayonnaise
- 1 egg beaten
- 1 tablespoon green pepper minced
- 1 tablespoon butter or margarine melted
- 1 teaspoon Pimiento minced
- 1/2 teaspoon dry mustard
- 1/8 teaspoon pepper
- salt to taste
- 1 pound backfin crabmeat picked for shells
- 1/2 cup mayonnaise
- 4 drops lemon juice
- 4 drops Worcestershire sauce
- paprika
Crab Cakes

- 1 pound backfin crabmeat picked for shells
- 2 eggs beaten
- 1 tablespoon green pepper minced
- 1 tablespoon French's mustard
- 1/4 teaspoon Worcestershire sauce
- 1/2 cup bread crumbs
- 3 tablespoons mayonnaise
