Tilapia with Green Beans

Combine flour, oregano and parsley in a shallow dish
- 2 T. flour
- 2 t. chopped fresh oregano
- 2 T. chopped fresh parsley
- Kosher salt and freshly ground pepper
- 4 six ounce tilapia fillets
- 4 T unsalted butter
- 1/2 pd. thin green beans
- 1 clove garlic, chopped
- 1 cup grape or cherry tomatoes, halved
- Juice of 1 lemon
Salad Dressing Cake

Mix sugar and cocoa together
- 1 1/2 cups sugar
- 4 1/2 Tbs cocoa
- 2 1/4 tsp soda
- 1 1/2 cups cold water
- 3 cups flour
- 1 1/2 cups Miracle Whip salad dressing
- 1 1/2 tsp vanilla
Beef with Sugar Snap Peas

1 Cook rice according to the package directions
- 3 1/2 ounces bag boil-in-bag brown rice
- 12 ounces flank steak, trimmed
- 2 Tbs lsoy sauce
- 3.4 cups chicken broth
- 1/4 cup hoisin sauce
- 2 tsp cornstarch
- 2 tsp dark seseme oil
- 1 cup sliced onions
- 1 Tbs bottled fresh ground ginger
- 3 cups frozen sugar snap peas
- 1 cup preshredded carrots
7 Layer Salad

1 In a 9" x 13" glass pan, layer in this order: lettuce, onion, celery, peas, cheese, bacon
- 1 medium Head of lettuce
- 2 bunches green onion (all parts)
- 1 cup celery, chopped
- 10 ounces frozen green beans, cooked & drained
- 8 ounces cheddar cheese, grated lemon peel
- 7 slices bacon, cooked & crumbled
- 1-2 cup miracle whip
- 1-2 cup sugar

- 1/4 c parmesan cheese
- 1/2 t. garlic
- 1/8 c. chicken bullion
- 1/8 t. pepper

1 Cream butter, peanut butter and vanilla together, adding confectioner's sugar until proper consistency is reached
- 1 stick softened butter
- 1 3/4 cups creamy peanut butter (18 oz. jar)
- 1 tsp vanilla
- 1 pound confectioner's sugar
- 12 oz semi-sweet chocolate chips
- 1 Tbs vegetable shortening
Chicken Club Roulades with White Wine-Mustard Cream Sauce

1 Preheat oven to 325 degrees
- 8 slices Bacon
- 4 Skinless boneless chicken breast halves
- Essence seasoning
- 1 large avocado, peeled, seeded and cut nto 12 even vertical slices
- 1/4 cup Sun-dried Tomatoes drained and chopped
- 4 ounces Goat cheese, crumbed
- 1 teaspoon freshly ground black pepper
- 2 teaspoons vegetable oil
- 1/2 cup Chardonnay wine
- 3 tablespoons minced shallots
- 2 tablespoons Dijon mustard
- 1 cup Heavy Cream
- 2 tablespoons chopped fresh parsley

- 1 tbs dry mustard

- 1/2 cup vinegar
- 3 cups salad oil
- 1 tsp celery seed

1 Preheat the oven to 350 degrees F
- 4 1 oz slices whole-wheat bread
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 4 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 egg whites
- 1/2 cup skim milk
- 1/2 cup all-purpose flour
- 4 6 oz skinless boneless chicken breast halves, pounded to 1/2-inch thickness
- Olive oil cooking spray
- 1 jar good-quality marinara sauce (about 3 1/2 cups)
- 3/4 cup (3 ounces) shredded part-skim mozzarella cheese
- 2 Tbs (1/2-ounce) shredded Parmesan
