Key Lime Bars

1. Adjust oven rack to middle position and preheat to 325
- 5 ounces animal cracker
- 3 tablespoons light or dark brown sugar
- 4 tablespoons unsalted butter, melted and cooled
- 2 ounces cream cheese, softened
- 1 tablespoon lime zest, grated
- 2 pinches table salt
- 14 ounces sweetened condensed milk
- 1 large egg yolk
- 1/2 cup lime juice
- 3/4 cup shredded coconut meat, toasted
Arugula and Fennel Salad

In bowl whisk together first 5 ingredients
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 bunches arugula leaves -- stems removed and torn
- 1 each fennel bulb -- cored and sliced
- 1/3 cup pine nuts (pignolia) -- toasted
Spinach and Chicken Mastaccioli Casserole

1. Cook mostaccioli according to package directions, omitting salt and fat
- 10 ounces uncooked mostaccioli (tubular pasta)
- 2 10 ounce packages frozen chopped spinach, thawed
- 2 teaspoons vegetable oil
- 2/3 cup onion, chopped
- 2 large cloves garlic, minced
- 1 pound boned and skinned chicken breast, cut into 1" pieces
- 2 14.5 oz cans no salt added tomatoes, undrained and coarsely chopped
- 3 tablespoons no salt added tomato paste
- 1 1/4 teaspoons dried whole basil
- 3/4 teaspoon dried whole oregano
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 1/2 cup grated parmesan cheese
Almost Fat-Free Lemon Cheesecake with Blueberry Topping

- Cake Filling:
- Cooking spray
- 1 3/4 cups fat-free vanilla wafer cookie crumbs, or any fat-free cookie crumbs of your choice
- 1/4 cup unsalted butter, melted
- 3 (8-ounce) packages fat-free cream cheese
- 1 cup fat-free sour cream
- 2 cups sugar or sugar substitute (recommended: Splenda)
- 3 large eggs or 3/4 cup egg substitute
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- Blueberry Topping:
- 3 cups blueberries
- 3/4 cup sugar or Splenda
- 2 Tablespoons unsalted butter
- 2 Tablespoons fresh lemon juice
- 1 Tablespoon corn starch
Lemon Herbed Green Bean Casserole

- 1 can cream of chicken soup with herbs
- 1/2 cup milk
- 1 tablespoon lemon juice
- 2 cans green beans
- 1 1/3 cups french fried onions
Spinach Au Gratin

1. Heat the butter in a saucepan
- 1 ounce clarified butter
- 1 ounce flour
- 1 pint half and half
- 2 1/2 pounds frozen chopped spinach, thawed
- 24 ounces sharp cheddar cheese, shredded
- salt and pepper, to taste
Roasted Tomato Gazpacho

1. Preheat oven to 400 F. Line baking sheet with foil and coat with olive oil
- 12 plum tomatoes
- 2 tbsp olive oil
- 1 tbsp not balsamic vinegar
- 1 tsp sugar
- 1 tsp kosher salt
- 2 seedless Cukes skin on 1" chunks
- 1 red bell pepper 1" pieces
- 1 yellow bell pepper 1" pieces
- 1 orange bell pepper 1" pieces
- 1 red onion 1" pieces
- 6 scallions trimmed 1" pieces
- 2-3 cups tomato juice
- 3 tbsp white wine, champagne or white balsamic vinegar
- Hot sauce, salt, and pepper to taste.
