A crowd favorite for parties and family
- 2 1/4 cups all-purpose flour
- 1 1/2 Tbsp cayenne pepper
- 1 1/2 Tbsp paprika
- 1 1/2 Tbsp salt
- 1 1/2 Tbsp ground cumin
- 1 1/2 Tbsp ground coriander
- 2 cups skim milk
- 3 large eggs, beaten to blend
- 4 cups cornflakes, ground to crumbs
- 1 lb. chicken cutlets, cut crosswise into 1-inch-wide strips
- Canola oil for frying
- 1 lb. small elbow macaroni (whole wheat)
- 2 cups chopped green onions (about 8 large)
- 2 Tbsp chopped fresh oregano
- 8 Tbsp (1 stick) butter, divided
- 3 cups chopped onions
- 2 large cloves garlic, chopped
- 1/2 cup all-purpose flour

- 1 lb. extra-sharp cheddar cheese, grated
- 8 oz. provolone cheese, grated
- 2 tsp. paprika

- 1 garlic clove, pressed
- 1 8-oz package sliced crimini (baby bella) mushrooms
- 6 oz fresh shiitake mushrooms, stemmed, sliced
- 3 tsp chopped fresh thyme, divided
- 1 cup dry white wine
- Grated Parmesan cheese
Penne with Butternut Squash and Goat Cheese

- Vegetable oil cooking spray
- 1 (2-pound) butternut or kombucha squash, peeled, seeded and cut into 3/4-inch cubes
- 1 onion, diced into 1/2-inch pieces
- Olive oil, for drizzling
- Kosher salt and freshly ground black pepper
- 1 pound penne pasta
- 1 cup (8 ounces) goat cheese, crumbled
- 1 cup coarsely chopped walnuts, toasted (see Cook's Note)

- 2 cups red wine

- 3 bay leaves
- 3 or 4 jalapenos
- 1 green pepper
- 1 red pepper
- 3 cans kidney beans
- 5 tsp black pepper
- 1 tsp sugar

- 1 pound chicken thighs (bone-in), trimmed of excess fat
- 2 large cans crushed tomatoes
- 1 small can tomato paste
- 2 ribs celery, diced small
- 6 to 8 mushrooms, sliced
- 1-2 onions, diced
- Garlic, minced
- Oregano, 1 1/2 tsp
- Box of pasta, preferably a roni-esque noodle (cooked first, and added at the end)
- Optional: mix in a block (cubed) of your choice of cheese in the last 20 minutes

Make crust: Put oven rack in middle position and preheat oven to 350°F
- For crust
- 1 1/3 cups chocolate wafer crumbs (from about 26 cookies such as Nabisco Famous Chocolate Wafers)
- 5 tablespoons unsalted butter, melted
- 1/4 cup sugar
- For filling
- 2/3 cup sugar
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 4 large egg yolks
- 3 cups whole milk
- 5 oz fine-quality bittersweet chocolate (not unsweetened), melted
- 2 oz unsweetened chocolate, melted
- 2 tablespoons unsalted butter, softened
- 1 teaspoon vanilla
- For topping
- 3/4 cup chilled heavy cream
- 1 tablespoon sugar

- 2 1/2 cups bittersweet chocolate chips (do not exceed 61% cacao; 15 to 16 ounces), divided
- 1 1/2 cups all purpose flour
- 1/4 cup natural unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon instant espresso powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 large eggs
- 4 candy canes or 16 red-and-white-striped hard peppermint candies, coarsely crushed
