Udon Noodles with Shiitake Mushrooms in Ginger Broth

1. Bring a large pot of water to a boil
- 8 * 8 ounces Japanese udon or soba noodles
- 2 * 2 teaspoons sesame oil
- 2 * 2 teaspoons vegetable oil
- 1 1/2 * 1 1/2 tablespoons minced fresh ginger (1 1/2-inch piece)
- 2 * 2 shallots, very thinly sliced
- 1/4 * 1/4 pound (about 12) shiitake mushrooms, stemmed, caps wiped clean and quartered
- 2 * 2 cups homemade or low-sodium canned chicken stock
- 1 * 1 teaspoon rice-wine vinegar
- 2 * 2 teaspoons low-sodium soy sauce
- 3 * 3 cups (about 3 ounces) spinach, tough stems discarded, rinsed well, drained, and cut into 2-inch-wide strips
- 4 * 4 scallions, thinly sliced diagonally into 2-inch pieces
Turkey Ricotta Meatballs

- 1 lb. ground turkey
- 1/2 cup part-skim ricotta
- 1 egg
- 1/2 cup dry breadcrumbs
- 1/4 cup chopped fresh basil
- 1/4 tsp. pepper
- 1/4 tsp. salt
Sponge Toffee

1. Combine the sugar and syrup in a heavy medium saucepan set over medium-low heat
- 3/4 cup sugar
- 1/4 cup corn syrup
- 2 tsp. baking soda
- Spray a 9”x13” pan really well with nonstick spray.
Chicken and Avocado Soup

In a large pot, heat oil over medium heat
- 5 * 5 cups chicken broth
- 2 * 2 cups shredded chicken breast
- 1 * 1 tomato, diced
- 2 * 2 cloves garlic, minced
- 1-1/2 * 1-1/2 cups scallions, chopped fine
- 2 * 2 ripe hass avocados, diced
- 1/2 * 1/2 cup cilantro, chopped fine
- 4 * 4 lime wedges
- 2 * 2 tsp olive oil
- * salt + fresh pepper to taste
- * pinch cumin
- * pinch chipotle chile powder

- FOR CHOCOLATE:
- 1 cup heavy whipping cream
- 1/2 tsp vanilla
- 1 Tbsp white sugar
- Add 1 1/2 Tbsp cocoa powder
- 1 1/2 additional Tbsp white sugar
- FOR RASPBERRY:
- Add 1/2 cup lightly sweetened raspberry puree
- FOR STRAWBERRY:
- Add 1/2 cup lightly sweetened strawberry puree

- 1 (10 oz) jar mayonnaise, chilled
- 3 Tbsp Vietnamese chili garlic sauce

- 3 tablespoons cold reduced-fat stick margarine, cut into pieces
- 4 cups sliced peeled pears (about 2 pounds)
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon peel
- 1/2 teaspoon ground ginger

- 1/4 teaspoon ground turmeric
