Sift first 5 ingredients. Set aside
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1-2 tsp cinnamon (depending on how much you like cinnamon)
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 cups grated zucchini with skin
- 1 tsp vanilla
Italian Greens and Herb Salad

Blend the lemon juice, lemon peel, honey, 1 teaspoon of salt, and 1/4 teaspoon of pepper in a blender
- 1/4 cup fresh lemon juice
- 2 teaspoons grated lemon peel
- 1 teaspoon honey
- 1 teaspoon salt, plus more for seasoning
- 1/4 teaspoon freshly ground black pepper, plus more for seasoning
- 1/2 cup olive oil
- 1 head romaine lettuce, coarsely chopped
- 4 Belgian endives, thinly sliced crosswise
- 1 cup pitted kalamata olives, halved
- 1 cup (lightly packed) fresh Italian parsley leaves, coarsely chopped
- 3/4 cup (lightly packed) fresh basil leaves, torn into bite-size pieces

In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy
- 1 cup butter, softened
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract
- 3 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- Edible Paint Icing, recipe follows
- Garnish: silver dragees, sugar pearls, sparkling sugar
Sour Cream Dressing

1. Beat the cream with an egg beater til smooth, thick & light 2
- 1/2 pint sour cream
- 2 tbs lemon juice
- 2 tbs vinegar
- 1 scant tbs sugar
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp or more mixted mustard
Edible Paint Icing

In a medium bowl, combine water and meringue powder; whisk until foamy
- 1/4 cup cold water
- 3 tablespoons meringue powder
- 2 cups confectioners' sugar
- Food coloring, optional

- 1/3 cup heavy cream
- 1 bag (11 oz.) white-chocolate chips
- 2 Tbs. butter

- 2 cups low-fat milk (ie 1%, skim)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 tablespoon sugar
- 2 teaspoons vanilla
- 1 large egg
- 1 tablespoon canola oil
- 1-2 cup fruit (i.e., sliced bananas, strawberries, blueberries...your choice) (optional)
