Korean is my all time favorite cuisine. My first time leaving the country was to Seoul, South Korea, for work in 2006. I was amazed by the difference in culture. My first meal in the Korea I remember a server bringing out so many different dishes of kimchis. I had never seen anything more beautiful in my life. I fell in love with Korean barbecue, kimchi, bibimbap, tteokbokki and kimbap (Korean style sushi). One day I would love to go back and visit Seoul, but until then I will keep making Korean dishes to remind me of the exciting adventure I had while visiting.

Korean Stir Fry Udon & Chicken

Prepare the ingredients as mentioned in the above ingredients section
- 370 g Skinless chicken thigh (3 medium to large pieces, cleaned/rinsed in cold water and thinly sliced)
- 270 g Fresh baby bok choy leaves (3 medium bundles, separated and cleaned/rinsed in cold water)
- 230 g Brocoli (1 medium to large, cleaned/washed in cold water, stem trimmed and cut into small florets)
- 210 g Carrots (1 large, cleaned/skin peeled and chopped into long strips)
- 20 g Red capsicum (1/5 large, cleaned and seeded, chopped into long strips)
- 600 g Fresh udon noodles
- Marinade sauce (mix this sauce well in a small bowl)
- 6 Tbsp soy sauce
- 2 Tbsp honey
- 1 Tbsp minced garlic
- 1 tsp gochujang
- 3 sprinkles of ground black pepper
Korean Chicken Wrap

This is delicious as a lettuce wrap or salad or over brown rice
- For Chicken
- 1/4 cup Hoisin Sauce
- 1/4 cup low sodium soy sauce
- 2 tbsp honey
- 1 tbsp ginger paste or 1 tbsp finely grated fresh ginger
- 4 cloves garlic, minced
- 1 tsp Asian Chili garlic sauce
- 1 tsp sesame oil
- Salt and Pepper to taste
- 3 pounds skinless,boneless chicken thighs, trimmed of visible fat
- For Wrap
- Hoisin Sauce
- 1 head green leaf lettuce, separated into leaves, washed
- 1 english cucumber, peeled and cut into 2" matchsticks
- 1 cup shredded carrots
- 3 scallions, cut into 2" matchsticks

Chicken Wings With Angry Sauce

- 6 pounds chicken wings (about 24), tips discarded and wings split
- 1/4 cup canola oil
- Kosher salt
- Freshly ground pepper
- 1/3 cup gochujang (Korean chile paste)
- 2 tablespoons gochugaru (Korean chile powder)
- 2 tablespoons sugar
- 1 tablespoon toasted sesame oil
- 1 tablespoon water
- 2 teaspoons unseasoned rice vinegar
- 2 teaspoons soy sauce
- 2 teaspoons minced peeled fresh ginger
- 1 teaspoon minced garlic
- Sesame seeds and thinly sliced scallions, for garnish

Combine all of the sauce ingredients in a small sauce pot
- 1/3 cup gochujang
- 2 Tablespoons dark soy sauce
- 1/2 teaspoon ground black pepper
- 2 Tablespoons rice wine vinegar
- 1 Tablespoon sesame oil
- 1 Tablespoon honey
- 2 Tablespoons minced garlic
- 1 Tablespoon grated ginger

Rinse chicken pieces. Trim off excess fat
- Marinade:
- 1 pound boneless chicken thigh and/or breast.
- 3 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon brown sugar
- 1 tablespoon honey (or 1-1/3 more tablespoons brown sugar)
- 1 tablespoon rice wine (or mirin)
- 1 tablespoon minced garlic
- 1 teaspoon grated ginger

Rinse the wings in cold water, then lightly salt and pepper them
- 1 1 1 lb chicken wings (sectioned)
- 1/3 1/3 1/3 cup potatoes or 1/3 cup cornstarch
- 1/2 1/2 1/2 cup milk
- 1 1 1 teaspoon salt
- 1 1 1 tablespoon ground black pepper
- vegetable oil (for deep frying)
- Stir Fry Sauce
- 2 2 2 tablespoons fine ground red chili pepper
- 2 2 2 tablespoons soy sauce
- 2 2 2 tablespoons sugar (or honey, or corn syrup)
- 1 1 1 tablespoon rice vinegar (or wine)
- 4 4 4 cloves peeled garlic
- 1/2 1/2 1/2 inch peeled fresh gingerroot
- 2 2 2 tablespoons korean red pepper paste (gochujang)
- to as needed to obtain a thin paste
- To Garnish
- 1 1 1 spring onion
- 1 1 1 tablespoon toasted sesame seeds
