Healthy Apple Oatmeal Muffins
By Isa_92
The muffins are very nice and moist and have a sweet, cruchy streussel and nuts topping.
As if that wasn't enough they are pretty healthy... the batter doesen't have butter, it only uses egg whites and has lots of healthy ingredients such as apple, oats and yogurt.

Preparation
Step 1
Spoon flour into measuring cups and level with a knife. Place flour in a large mixing bowl and add oats, brown sugar, baking powder, baking soda, salt and cinnamon. Stir with a whisk.
Combine milk, oil, vanilla, yogurt and egg whites, stirring until well blended. Add wet ingredients to flour bowl and stir until just moist. Blot shredded apple on kitchen paper to get rid of excess moisture, then add apple to mixture and stir.
Spoon batter into a lined 12-cup muffin tin. Sprinkle topping over it. Bake at 400 degrees for 20 minutes.
For Streussel Topping:
Combine flour and brown sugar. Cut 3 tablespoons butter into dry ingredients until mixture resembles coarse meal. Sprinkle on top of cake or muffins before baking.
