Crescent City Red Beans & Rice (Crock-Pot)

In New Orleans, Mondays was always laundry day and this is a traditional meal that would be simmering on the stove, while one would be tending to the laundry. Like most mom & pop places, we always served Red Beans & Rice on Monday. Always! I've changed the restaurant version a bit to reflect the fact that I use my Crockpot now.
