Vegan White Cake

One recipe yields one 8" or 9" cake. I used a double recipe for the cake in the picture. The original recipe calls for soy milk for which I subsituted almond milk. It also called for more vanilla and less almond. I switched the amounts for more almond flavoring and to complement the almond milk. I made this for a little boy's birthday. He is not able to eat most dairy products.
Ingredients
- 1 cup almond milk
- 1 tablespoon apple cidar vinegar
- 1-1/2 cups all-pupose flour
- 1 cup white sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup canola oil
- 1/4 cup water
- 1 tablespoon lemon juice
- 1 tablespoon almond extract
- 1/2 teaspoon vanilla extract

Step 1
Preheat oven to 350^ F. Grease and flour an 8" baking pan. Stir almond milk and vinegar together in a large glass measuring cup. Whisk flour, sugar, baking soda, baking powder and salt together in a bowl.
Briskly mix canola oil, water, lemon juice, vanilla extract and almond extract inot the almond milk mixture using a fork. Stir almond milk mixture into flour mixture until batter has no lumps. Pour into prepared baking pan.
Bake in preheated oven approximately 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
