Lamb "Burritos"
Talk about fusion cuisine - translating a Mexican favorite into an Armenian treat, this was inspired by the notion of an "Aram Sandwich" in Robin Donvan's cookbook Campfire Cuisine. A great way to re-purpose leftover roast lamb or lamb chops.
Substitutions = lamb/ground beef; lentils/refried beans; pilaf/Mexican rice; Armenian string cheese/shredded Mexican blend; garlic yogurt/sour cream; mint leaves/cilantro

Ingredients
- Lavash or Flour Tortillas
- Plain yogurt
- Garlic
- Boiled lentils (mashed)
- Cooked lamb
- Pilaf
- Armenian String Cheese
- Black Pepper
- Mint leaves (optional)

Preparation
Step 1
Depending on how many you will be making and how much you like garlic, add a little minced garlic to some plain yogurt
Shred the lamb in your food processor with the plastic dough blade in place
Lay the lavash (or flour tortilla) on your work surface and spread with the yogurt mixture, not quite to the edges
From one side across the center to within about an inch of the opposite side, layer your mashed lentils, lamb, pilaf, and string cheese (mint optional)
Top with some freshly ground black pepper and mint leaves (optional)
Roll into a burrito and enjoy
