Ingredients

  • 1 T olive oil
  • 1 C chopped onion
  • 1 # ground turkey
  • 3 T minced garlic
  • 2 T chili powder
  • 1 t paprika
  • 1/8 t black pepper
  • 1 can stewed or chopped tomatoes
  • 1 can chicken broth
  • 1/2 C pureed or chopped red peppers
  • 1/2 C pureed or shredded or sliced cooked carrots
  • 1/4 C cornmeal
  • 1 can Caribbean black beans un-drained

Preparation

Step 1

In a medium sized pot heat oil and sauté onions. Add ground turkey, chili powder, salt, paprika, and pepper to sautéed onions. Stir fry until turkey is no longer pink. Add all the other ingredients and bring to a boil. Reduce heat and simmer for 20 minutes.
