Ingredients

  • 2 C. Chicken Broth
  • 2 C. Water
  • 4 tsp Dried Minced Onions
  • 2 C. uncooked Long Grain Rice
  • 2 C. Frozen Peas, thawed
  • 4 C. Cubed Cooked Turkey or Chicken
  • 2 cans Cheddar Cheese Soup, undiluted
  • 2 C. Milk
  • 1 tsp Salt
  • 2 C finely Crushed Ritz Crackers (about 60)
  • 6 Tbsp Butter, melted

Preparation

Step 1

In a large saucepan, bring the broth, water & onion to a boil. Reduce heat. Add rice; cover & simmer for 15 minutes. Remove from heat; fluff with fork. Divide rice between 2 greased 9 x 9 baking pans. Sprinkle each pan with peas & turkey. In a bowl, combine soup, milk & salt until smooth; pour over turkey. Toss the cracker crumbs with the butter; sprinkle over top. Cover & freeze. IF FROZEN: Thaw in fridge. Bake, uncovered at 350` for 70 minutes or so
