Ingredients
- 1-2 lb. sausages
- 1 green pepper (cut into strips)
- 2 celery stalks thinly sliced
- 1 small onion sliced
- 1-14oz can of pineapple chunks
- 1/4 cup vinegar
- 1 tblsp soy sauce
- 2 tblsp cornstarch
- 1/4 cup brown sugar

Preparation
Step 1
In a lightly greased pan fry sausages till lightly browned on the outside.
Remove and drain the pan. Keep warm and drain off all but 2 tblsp of fat. Add the green pepper, celery and onion and saute till brown. Drain pineaplle chunks... keep juice on side. Add pineapple to vegetable mix.
Combine cornstarch and brown sugar. Mix in pineapple juice, vinegar and soy sauce. Slowly add to frying pan and cook...stirring constantly till thickend and clear.
Add sausages and serve over hot rice.
