Ingredients
- Use English Toasting Bread and slice kinda thick or use a thicker sliced bread
- Eggs, whisked with salt and pepper..use 2 for each sandwich
- diced fresh tomato and green onion
- mozzarella cheese, shredded
- diced bacon, fried and drained
- Canadian bacon or cooked sausage patties
- Sliced cheese- I use Pepper Jack

Preparation
Step 1
Do prep work first so it goes quickly after that.
Mix the diced tomato and green onion with mozzerall cheese in a bowl while the bacon is frying. Whish the eggs with the salt and pepper in another bowl like for scrambled eggs.Cut the middle out of the slice of bread leaving a 1 inch border. Then place in skillet that is sprayed with Pam. Put the tomato mixture in the middle and then add the egg mixture over that. It doesn't take much or it will run all over the pan so add the eggs slowly. Brown and flip. As soon as you flip, add the Canadian bacon or sausage patty and cheese. Then top with the other piece of bread.
