Shrimp - One Pan w/Asparagus & Tomatoes

Ingredients
- 1 lb asparagus, cut into 1 inch pieces
- 1 pint cherry tomatoes
- 2 tbsp olive oil
- 1 garlic clove, minced (feel free to add more garlic if you like!)
- 1/4 tsp salt
- 1/8 tsp pepper
- Shrimp
- 1 lb uncooked shrimp, shelled, deveined and tails removed
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 4 garlic cloves, minced
- 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp onion powder
- 1/4 tsp basil
- 1/4 tsp red pepper flakes
- 1/8 tsp pepper
- 4 tbsp butter
- Garnishes
- 3 tbsp parsley, chopped
- 2 tbsp lemon juice

Preparation
Step 1
Line a shallow pan with foil & spray with Pam
Cut up Asparagus into 2" pieces & add to pan
Add Cherry Tomatoes
Sprinkle with olive oil & salt & pepper
Cook in oven at 400 for 5 minutes
In a small bowl, add shrimp and spices, and mix so all are covered
Push asparagus & tomatoes to one side of pan and then add
shrimp, making sure to scoop out all the spices
Top vegetables & shrimp with 4 pats of butter
Return pan to oven & cook for about 6 minutes until shrimp is opaque
Squeeze juice from lemon over shrimp, sprinkle with fresh chopped parsley
and serve. Can accompany pasta, quinoa, rice, etc.
