Jamaican Pepper Shrimp
A Jamaican street food delicacy made of whole shrimp, marinated in hot pepper marinade then cooked to perfection.
Ingredients
- 1 lb shrimp (in shell and heads on)
- 3 hot peppers (scotch bonnet or chilli peppers)
- 7 cloves garlic
- 4 tbsp butter
- 1 lime
- 1 tbsp olive oil

Preparation
Step 1
Devein shrimp.
Rinse with water then squeeze lime juice over shrimp
Add water to shrimp and "wash"
Pour water off and set aside
Blend hot peppers and 3 cloves of garlic (do not use seeds of peppers if you need to reduce heat)
Add olive oil and mix
Mix hot pepper mix into shrimp and leave to sit for at least 45 minutes
Heat pot on medium heat and add butter till melted
Add remaining garlic crushed
Add shrimp along with any liquid created while marinating
Stir and cook for no more than 8 minutes
Remove from heat
Add chopped green onions
Leave to cool.
