Turkey & Veggie Kabobs

Ingredients
- 12 oz turkey tenderloin, cut into 1" cubes
- 1/2 lb sweet potato, peeled & cut into 1" cubes
- medium mushrooms
- red onion, quartered
- 1 green bell pepper, cut into 1" pieces
- 2 tsp olive oil
- 1/2 tsp salt
- 1/3 cup orange marmalade
- 1 Tbs Dijon mustard
- 1 tsp dried rosemary leaves

Preparation
Step 1
Put potatoes & water in microwave safe bowl & cover with plastic wrap. Cook in microwave about 4 minutes until potatoes are a little tender. Drain water & add mushrooms, onion & pepper. Drizzle with oil & salt & toss to coat.
Arrange on skewers. In another bowl combine marmalade, mustard & rosemary. Mix well. Brush on kabobs before & during grilling. Grill over medium heat until meat is done.
