Ingredients

  • 2cans artichoke hearts drained and chopped
  • 1/2 c frozen spinach thawed and drained
  • 2 Tbsp olive oil
  • 1 small yellow onion chopped
  • 2 cloves garlic minced
  • 8 ounces cream cheese softened
  • 1/2 c sour cream
  • 1 c mozzarella cheese shredded
  • 1 c parmesan cheese shredded
  • 1 package puff pastry
  • Chopped chives

Preparation

Step 1

Preheat oven to 375 degrees
Heat olive oil add onion cook until translucent and lightly browned. Add garlic cook for 1 minute. Season with salt and pepper. Set aside to cool. Combine the onion mixture with the artichokes, spinach, sour cream, cream cheese and mozzarella cheese. Mix well
Butter a non stick mini muffin pan. Rollout puff pastry cut into squares.Press into cups fill sprinkle with parmesan cheese Bake 15-20 min. Garnish with chives
