Paleo Shrimp Cakes

Ingredients
- 1 Lb raw shrimp,. shelled, deveined and roughly chopped. (i didn't chop it, I just through it in food processor)
- 1/4 cup coconut milk
- 2 tbs chopped cilantro
- 1 tsp minced jalapeno or thai pepper
- I doubled the recipe it made a lot

Preparation
Step 1
In a food processor pulse shrimp, coconut milk, cilantro and hot pepper 10-15 times until ingredients are combined but the texture is still slightly chunky. Heat several tbs of oil in a pan over medium heat. For bite sized shrimp cakes use a tbs measurement to scoop up shrimp batter and drop it in pan. ( I used a generous tbs) Cook each side 2-3 minutes until nicely browned. I put the shrimp cake on top of salad. Add whatever ingredients you want to salad
