Ingredients
- 1 lb mild or spicy italian sausage (your choice)
- 1 loaf day old French Bread, cut into 3/4 in. cubes (about 10-12 cups)
- 1 cup walnuts
- 2 cups onion, chopped
- 2 cups celery, chopped
- 6 tbsp butter
- 1 green apple, peeled, cored and chopped
- 1-2 cups vegetable stock
- 1/4 cup fresh parsley, chopped
- 1 tsp poultry seasoning
- 1 tsp sage
- Salt and Pepper to taste.

Step 1
Toast walnuts by heating in frying pan, on medium-high for a couple of minutes.
Cook the sausage in a LARGE Saute pan. Remove the sausage to a plate, lined with paper towel.
Heat the Large Saute Pan on medium heat. Add 3 tbsp butter and melt. Add the bread and stir to coat. Then let the bread toast.
In a Dutch Oven, melt the other 3 tbsp butter. Saute onion and celery about 5-10 minutes. Add the bread. Add the sausage. Add the walnuts. Then add the apples and parsley. Add 1 cup stock. Add sage, poultry seasoning, salt and pepper.
Cover. Turn heat to low. Cook for an hour, or until the apples are cooked through. Check every 10 minutes and add stock as needed to keep from sticking to bottom of pan.
