Ingredients
- 5 T fresh lemon juice
- 5 T fresh lime juice
- 4 T prepared mustard
- 6 chicken thighs
- 3/4 t salt
- 1/2 t ground black pepper
- 1/4 t curry powder
- 1/4 t dried oregano
- 1 T lemon zest
- 1 c dried bread crumbs
- 6 T butter
- 1 lemon, sliced for garnish
- 1 T chopped fresh parsley for garnish

Step 1
Combine lemon & lime juices with prepared mustard. Brush over chicken. Set aside.
Combine bread crumbs, salt, pepper, curry powder, oregano & grated lemon peel. Roll chicken in crumb mix, coating well.
In heavy baking pan or iron skillet, melt butter over med heat. Place chicken in pan, skin side down.
Place in preheated 350 degree oven. Bake uncovered for 20 min. Turn chicken & bake until tender, about 30 more min. Serve on warm platter with sliced lemons & chopped parsley, if desired.
