Kofte Lamb Kebabs

These Kofte Lamb Kebabs are simple to make, yet they're sure to impress!
Ingredients
- 1 lb ground lamb, room temperature
- 2 TB organic red onions, diced
- 3 organic garlic cloves, grated or pressed
- 2 TB organic Italian parsley, chopped
- 1 small bunch organic thyme, leaves removed and lightly chopped
- Zest of 1 organic lemon
- Real Salt or Himalayan sea salt

Step 1
If using wooden skewers, soak them in water ahead of time, per their instructions. I use stainless steel skewers.
Preheat oven to 350 or broil, your choice.
In a large bowl, mix together ingredients, careful to not overwork the lamb.
Set aside 10 minutes at room temperature to let flavors combine.
Portion meat mixture into fourths {I use my hand to even out the mixture and score a + over the top to divide equally}.
Gently press a portion of lamb mixture onto each skewer. Alternatively, you can shape the meat first and thread the skewer through and reshape as needed.
Brush each with a little olive oil and place on a baking rack on a sheet pan.
Broil: Put under broiler for about 7 minutes, flip and continue cooking 8-10 minutes.
Bake: Bake in a preheated 350 degree oven for 25-30 minutes.
Serve immediately.
