Ingredients

  • Cupcakes:
  • 1 box chocolate cake mix
  • 4 eggs
  • 1/2 cup oil
  • 1 cup water
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk chocolate chips
  • Frosting:
  • 1 stick butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 box (4 cups) powdered sugar
  • 1 teaspoon vanilla

Step 1

Cupcakes:
Preheat oven to 350 degrees. Line muffin pans with muffin paper liners. In large bowl, combine cake mix, eggs, oil, and water. With electric mixer, beat on medium speed for two minutes; set aside. In medium bowl, beat cream cheese and sugar until blended. Beat in egg and vanilla. Stir in chocolate chips. Fill paper liners halfway with cake batter. Spoon one tablespoon cream cheese mixture on top. Bake for 19-22 minutes or test by inserting toothpick in center of a cupcake. If it comes out clean, it's done. Cool. Frost.


Frosting:
Beat cream cheese and butter until smooth. Gradually, beat in powdered sugar. Stir in vanilla. Frost cooled cupcakes. Store in refrigerator.


Variations:

Substitute German Chocolate or Red Velvet cake mix in place of the Chocolate cake mix.

Substitute 1/2 cup flaked coconut and 1/2 cup chocolate chips in place of the 1 cup of chocolate chips.

For fluffier frosting, add 1 cup marshmallow cream.
