Cajun Meat Loaf

Ingredients
- 2 bay leaves
- 1 tbl. salt*
- 1 tsp. cayenne pepper*
- 1 tsp. black pepper*
- 1/2 tsp. white pepper*
- 1/2 tsp. ground cumin*
- 1/2 tsp. ground nutmeg*
- 4 tbl. butter, unsalted
- 3/4 c. finely chopped onions
- 1/2 c. finely chopped celery
- 1/2 c. finely chopped green peppers
- 1/4 c. finely chopped green onions
- 2 tsp. minced garlic
- 1 tbl. Tabasco sauce
- 1 tbl. Worcestershire sauce
- 1/2 c. evaporated milk
- 1/2 c. catchup
- 1 1/2 lbs ground beef
- 1/2 lb ground pork
- 2 eggs, lightly beaten
- 1 c. fine dry bread crumbs

Preparation
Step 1
Combine seasoning mix ingredients in a small bowl and set aside.
Melt butter in a 1 qt, saucepan over medium heat. Add vegetables, sauces and seasoning mix. Saute until mixture starts sticking to the pan, about 6 minutes, stirring occasionally and scraping the pan bottom well. Stir in milk and catchup. Continue cooking for about 2 minutes then set aside to cool to room temperature.
Place meats in an ungreased 13x9 inch baking pan. Add eggs, cooked vegetables, removing the bay leaves, and bread crumbs. Mix by and and shape into a loaf about 6 inches wide by 12 inches long. Bake uncovered at 350 degrees for 25 minutes and then raise the heat to 400 degrees and bake for another 35 minutes.
* If desired you can substitute 2 tbls + 2 tsps of "Paul Prudhomme's Meat Magic", not exactly the same but close enough
