Ingredients
- 3 slices bacon coarsely chopped or pancetta
- 1 pkg. frozen pearl onions, thawed (can use repared fresh pearl onions)
- 1 container fresh sliced mushrooms
- 2 boneles sking chicken breasts
- 1/4 cup flour
- 1/2 cup water or chicken broth/stock
- 1/4 cups balsamic vinaigrette dressing
- 1 can diced tomatoes with garlic, and olive oil, undrained
- 2 bay leaves

Step 1
In large skillet that has a lid: cook and stir bacon on medium-high heat for 2 mins. Add onions and mushrooms; cook 4 mins. Remove bacon mixture and set aside. In pan drippings; add chicken and cookon medium-high heat for 2-3 mins on each side or until lightly browned. In small bowl combine; flour , water and dressing. Add flour mixture and tomatoes; stir until chicken is covered; add bay leaves. Cover pan and lower to a simmer for 10 mins. Remove bay leaves and add bacon mixtureaa and simmer of another 15 mins. Serve with rice or pasta.
