HG's Nacho-rific Stuffed Chicken

- 1/2 cup fat-free refried beans
- 4 wedges The Laughing Cow Light Creamy Swiss cheese
- 1/4 cup shredded fat-free cheddar cheese
- 16 low-fat baked tortilla chips (like the kind by Guiltless Gourmet)
- 1 tsp. dry taco seasoning mix
- Four 5-oz. raw boneless skinless lean chicken breast cutlets, pounded to 1/3-inch thickness
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- 1/4 cup taco sauce, divided
- Optional toppings: fat-free sour cream, salsa
Instant Pot Corned Beef and Cabbage

Rinse the corned beef under cold water to remove excess salt and gel
- 3 pound flat cut corned beef brisket with seasoning packet
- 4 cups of beef broth
- 1 large onion, quartered
- 8 cloves of garlic
- 6 medium red potatoes, quartered
- 3 large carrots, cut into 2-inch pieces

- 2 tbsp. chopped canned chipotle peppers (previously packed in adobo sauce) + 2 tsp. canned adobo sauce
- 2 tsp. chopped garlic
- 1 tsp. chili powder
- 1 tsp. ground cumin
Low Carb Slow Cooker Sesame Chicken

- 3 lbs Boneless Skinless Chicken Breast
- 1 cup Walden Farms Pancake Syrup
- 1/2 cup Bragg Liquid Aminos (or low sodium soy sauce)
- 1/2 cup Diced Onion (optional)
- 2 Cloves Garlic Chopped
- 2 TBSP Rice Vinegar (Any white vinegar will do i.e. white wine, apple cider, etc).
- 1 TBSP 80 Proof Vodka
- 4 Packets Monk Fruit in the Raw
- 4 TBSP Sesame Seeds (add after chicken is cooked)
- 2 scallions (optional garnish to add after chicken is cooked)

Crab Cakes

For the crab cakes: (1) Line a baking sheet with aluminum foil
- For the crab cakes:
- 2 large eggs
- 2-1/2 tablespoons mayonnaise, best quality such as Hellmann’s or Duke’s
- 1-1/2 teaspoons Dijon mustard (I went with Grey Poupon)
- 1 teaspoon Worcestershire sauce (I went with the classic Lea & Perrins)
- 1 teaspoon Old Bay seasoning
- 1/4 teaspoon salt
- 1/4 cup finely diced celery, from one stalk
- 2 tablespoons finely chopped fresh parsley
- 1 pound lump crab meat
- 1/2 cup panko (Progresso makes good panko-style bread crumbs.)
- Vegetable or canola oil, for cooking (I went with LouAna canola for a nice, extra-light flavor.)
- For the tartar sauce:
- 1 cup mayonnaise, best quality such as Hellmann’s or Duke’s
- 1-1/2 tablespoons sweet pickle relish
- 1 teaspoon Dijon mustard
- 1 tablespoon minced red onion
- 1-2 tablespoons lemon juice, to taste
- Salt and freshly ground black pepper, to taste
