- 1/2 cup chopped fresh basil
Turkey Meatballs

Heat oil in large skillet (use enough oil to cover just the bottom of skillet)
- 2 pounds ground turkey
- 1 medium onion , chopped
- 1/2 red pepper , chopped
- 1/2 green pepper , chopped
- 3 cloves garlic , chopped
- 2 eggs
- 1 Tbsp. Bread crumbs
- 1 tsp. salt
- 1 tsp. ground pepper
- olive oil or vegetable oil
Homemade Salsa

- 1 bunch of cilantro
- 3 Cloves of Garlic
- 3 cans of Mexican style tomatoes
- 1 Jalapeño
- 3 Tomatoes
- 3-4 green onions
- 3 serrano peppers (I think I only used 1)

Cold Macaroni and Tuna Salad

- 3 eggs
- 3 cups macaroni
- 1/2 (10 ounce) package frozen green peas
- 2 (6 ounce) cans tuna, drained
- 1/4 cup mayonnaise
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Easy One Bowl Banana Bread

No need for a mixer for this recipe
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can easily reduce to 3/4 cup)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of all-purpose flour
Maple Sugar-Apples and Grahams

Toss apples with sugar and cinnamon; set aside
- 2 unpeeled apples, thinly sliced
- 1 Tbsp. brown sugar
- 1/2 tsp. ground cinnamon
- 1/3 cup fat free sour cream
- 2 tsp. maple-flavored or pankace syrup
- 4 graham crackers broken into 4 small rectangles
Pimento Cheese Sandwiches

In medium bowl, combine cheeses, mayo, pimentos, and pepper, stirring to combine well
- 8 oz packages of sharp cheddar cheese, grated
- 8 oz Colby cheese, grated
- 1 1/4 cups Mayo
- 7 oz jar diced pimentos, drained
- 1/2 tsp ground black pepper
- Whole grain white bread

Turkey Meatloaf

Preheat oven to 380 degrees
- 2 pounds lean ground turkey
- 1 egg
- 1/4 cup Bread crumbs
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 2 tsp minced garlic
- 2 tbsp (squirts) ketchup
- 1 tbsp (squirt) mustard
- 1 tbsp (squirt) Italian dressing
- 2 tbsp Worcestershire sauce
- 8 oz (small can) tomato sauce
- 1/4 cup grated Parmesan cheese
Chicken Salad Sandwiches
