Chicken with Sun-Dried Tomatoes

Heat 2 TBS oil in 10" skillet over medium-high heat
- 3 TBS olive oil
- 4 skinless, boneless chicken halves
- 1 shallot, finely chopped
- 1 can mushroom soup
- 3/4 cup water
- 1/4 cup thinly-sliced sun-dried tomatoes
- 1 TBS. red wine vinegar
- 2 TBS chopped fresh basil leaves
- 4 cups extra wide egg noodles, cooked and drained
- 1/4 cup shredded Pecorino Romano or Parmesan cheese
Gingerbread Muffins

1. Preheat oven to 350 degrees
- 1 1/4 cups whole wheat flour
- 1/4 cup nonfat dry milk
- 1 1/2 tsp ground ginger
- 3/4 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 cup skim milk
- 3/8 cup applesauce
- 1/4 cup molasses
- 3 tbsp maple syrup
- 1 tbsp canola oil
- 1 egg white, lightly beaten
Kiwi Strawberry Twist

- 4 cups kale and dandelion greens, fresh
- 4 cups orange juice, fresh squeezed
- 4 cups strawberries
- 4 ripe kiwi
- 2 banana
- 2 lemon, squeezed
Pot Roast

- 1 (3 to 4-pound) boneless chuck roast
- 1 teaspoon House Seasoning, recipe follows
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 cup thinly sliced onion wedges
- 3 cloves garlic, crushed
- 2 bay leaves
- 1 (10 3/4-ounce) can cream of mushroom soup
- 1/4 cup red wine
- 2 tablespoons Worcestershire sauce
- 1 tablespoon beef bouillon granules
- 3/4 cup water
- House Seasoning
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
Gingerbread Waffles

1. Beat egg yolks with whisk and add milk, molasses and brown sugar
- 6 eggs, separated
- 2 cups skim milk
- 1 cup dark molasses
- 1 cup brown sugar, firmly packed
- 3 cups flour
- 8 teaspoons baking powder
- 1 teaspoon salt (optional)
- 2 teaspoons cinnamon
- 2 teaspoons ginger
- 1/2 teaspoon cloves
- 1 cup apple butter, melted
- 1/2 cup unprocessed wheat bran
Granola

1. In large roasting pan, precook oats, nuts and coconut on 225 for 15 minutes
- 6 cups rolled oats
- 1 3/4 cups coconut flakes
- 1 1/2 cups almonds, blanched
- 1 1/2 cups pecan halves
- 1 teaspoon salt
- 1 cup Craisins
- 4 ounces dried blueberries
- 1 1/4 cups honey
- 3/4 cup canola oil
- 1 tablespoon vanilla extract
Sweet Cornbread

In a large mixing bowl stir together cornmeal, flour, sugar, baking powder and salt
- 3/4 cup yellow cornmeal
- 1 1/4 cup all purpose flour
- 1/2 cup sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 6 Tablespoons melted butter
- 2 eggs
- 1 cup milk
Kiwi Berry Punch

Bacon Muffins

- 2 cups sifted all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 3 to 4 slices of bacon, cooked and crumbled
- bacon drippings from cooking bacon
- 1 cup milk
- 2 eggs, well-beaten
SLOW COOKER BROCCOLI BEEF

- 1.5 pounds flank steak, thinly sliced and chopped into 2 inch pieces
- 1 cup beef broth
- 2/3 cup low sodium soy sauce
- 1/3 cup brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 1/4 teaspoon red chili flakes (optional)
- 4 cups broccoli florets
- 2 tablespoons corn starch + 4 tablespoons cold water
