Parmesan Roasted Asparagus

Italians often eat their vegetables as "antipasti", that is, before the main course
- 2 1/2 pounds fresh asparagus (about 30 large)
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup freshly grated Parmesan cheese
- 2 lemons, but in wedges, for serving
Mashed Sweet Potatoes with Pecan Crumb Topping

- Topping:
- 2-lbs of Sweet Potatoes, peeled and cubed
- 1/4 cup brown sugar
- 2 tsp kosher salt
- 1 tsp black pepper
- 1/2 cup maple syrup
- 1 stick of butter
- 3/4 cup flour
- 1 1/2 cups pecan pieces
- 1 1/2 cups brown sugar
- 1 stick of butter, room temperature
Summer Bean Salad

This is a delicious salad that has been made over and over again in the Elias household
- 1 can black beans, drained
- 1 can light red kidney beans, drained
- 1 can garbanzo beans, drained
- 6-8 oz. salsa (Chi Chi's mild salsa)
- 1/3 cup vegetable oil
- 1 1/2 teaspoons chili powder
- 1 teaspoon salt
- 2 stalks celery, chopped
- 1 small red onion, chopped (I usually only use 1/2 red onion)
- 1 medium tomato, chopped
- 2 limes, squeeze juice
Old Fashioned Blackberry Pie

- Pie Crust (Pate Brisee):
- 1 cup All-purpose flour (140 grams)
- 1 cup + 3 tablespoons All-purpose flour (165 grams)
- 1 teaspoon Kosher salt (3 grams)
- 8 ounces Cold unsalted buter, cut into 1/4 inch cubes (227 grams)
- 1/4 cup Ice water (58 grams)
- Pie Filling:
- 4 cups fresh blackberries
- 1 1/4 cups sugar
- 6 tablespoons cornstarch
- 2 tablespoons butter, softened
- Dash of salt

- 1/2 ripe avocado
- 3/4 cup cilantro, stems removed
- Juice from 1 lime
- 1 clove garlic
- 1 Tbsp. olive oil
- 1 tsp. agave/honey
- 1/8 tsp. salt

- 2/3 cup (about 5 ounces) cream cheese

- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- Topping:
- 6 cups small fresh strawberries, hulled and divided
- 2/3 cup sugar
