Parmesan Soup from Paris

Coarsely chop the onions. Melt the butter in a large pot, add the onions and fry on a low heat for 10 minutes
- 2 onions (coarsely chopped)
- 50 g/ 1/4 cup unsalted butter
- 200 g/ 1/2 pound parmesan (sliced)
- 1 liter/ 1 quart chicken stock
- 2 liters/ 2 quarts cream
- 1 liter/ 1 quart milk
- 50 g/ 1/3 cup bacon (finely chopped)
- 10 branches of chives (finely chopped)
- 1 shallot (finely chopped)
- 2 tbsp croûtons (fry some diced small cubes of country bread in olive oil until golden)
- Salt and pepper (for seasoning)
Korean-Style Beef Skewers

Great Asian flavored beef recipe that is very delicious and easy to make
- 6 tablespoon soy sauce
- 1/3 cup sugar
- 1 teaspoon sambal oelek (chile paste, such as Huy Fong)
- 1 tablespoon canola oil
- 1 tablespoon fresh lime juice
- 4 garlic cloves, minced
- 1 (1-pound) top sirloin steak, sliced against the grain into thin strips
- 1/2 cup water
- 3 tablespoons thinly sliced green onions
Chiliqueles with Chorizo

- Stove-Top Salsa:
- 6 oz. mexican-style pork chorizo
- 1 tablespoon vegetable oil
- 3 cups Stove-Top Salsa
- Tortilla Chips
- 4 oz grated cheddar cheese
- 4 oz grated monterey jack cheese
- 1/2 cup sour cream
- 1 small red onion, diced
- 1/2 cup fresh cilantro leaves, chopped
- 6 roma tomatoes
- 1 large yellow onion, root removed, peeled and halved
- 1 jalapeno, stemmed
- 2 cloves garlic, peeled
- 1 teaspoon salt
- 1 cup loosely packed fresh cilantro leaves and stems
- 1 teaspoon salt, if desired
- freshly ground black pepper
- Tortilla Chips:
- 3 cups canola oil
- 36 corn tortillas, cut into 8 wedges each
- coarse sea salt
- sweet paprika
Sweet-and-Sour Sauce

This recipe captures the sparkling flavors of sweet-and-sour dishes
- For the Sauce:
- 2 tablespoons water
- 2 teaspoons cornstarch
- 1/4 cup chicken stock or vegetable stock
- 2 tablespoons white vinegar
- 2 tablespoons sugar
- 2 tablespoons ketchup
- 1 tablespoon pineapple juice from canned pineapple chunks, or orange juice
- For the Sweet-and-Sour Chicken:
- 2 tablespoons dry sherry or Shaoxing rice wine
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1 tablespoon chopped fresh ginger
- 2 teaspoons chopped garlic
- 3/4 cup coarsely chopped red and green peppers
- 1/2 cup coarsely chopped onion
- 1/2 cup canned pineapple chunks
- 3 tablespoons chopped green onion
Salad Dressing

Beef Burgundy

This is delicious! One of my favorite recipes
- Bouquet Garni:
- 2 thick slices of bacon, cut into 1 inch pieces
- 1 1/2 pounds boneless, well marbled beef (Sirloin), cut into 1 inch cubes
- 1/2 cup all-purpose flour
- salt and pepper to taste
- 4 tablespoons unsalted butter
- 1 large onion, finely chopped
- 1 large clove garlic, finely chopped
- 1 tablespoon tomato paste
- 2 cups red burgundy (or Pinot Noir)
- 4-5 shallots, peeled
- 1- 4 inch celery rib
- parsley stems
- thyme sprigs
- 1 bay leaf
- 2 whole cloves
Asparagus with Pine Nuts

This is my very favorite way to cook asparagus
- 1 pound asparagus, ends trimmed
- 3 quarts boiling, salted water
- 3 tablespoons unsalted butter
- 1/2 to 1 teaspoon minced garlic
- 1 teaspoon chopped fresh basil
- 3 tablespoons toasted pine nuts
- freshly ground black better
- 1/4 cup grated parmesan cheese
Pepperoni Bread

- 2 loaves frozen bread dough, thawed
- 1/2 pound thinly slice pepperoni
- 2 packages provolone cheese, cut into thin strips
- 3 eggs
- 2 teaspoons oregano
- 2 tablespoons parmesan cheese
Apple Cider Slaw

- Slaw:
- 4 cups cabbage slaw mix
- 2 medium firm-red apples cored and chopped
- 1 cup diced celery
- 1/2 cup sliced almonds, toasted
- Dressing:
- 1/4 cup apple cider vinegar
- 3 tablespoons sugar
- 1 tablespoon vegetable oil
- 1/2 teaspoon celery salt
- 1/4 teaspoon salt
Oriental Cole Slaw

- 1 package instant vegetable flavored oriental noodles
- 1/2 head cabbage, chopped
- 4 green onions, sliced
- 1/2 cup slivered almonds, toasted
- 2 tablespoons sesame seeds
- Dressing:
- 1/2 cup vegetables oil
- 3 tablespoons vinegar
- 2 tablespoons sugar
- Salt and pepper to taste
