Cook spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente
- 12 ounces spaghetti
- Kosher salt
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 large shallot, finely chopped
- 1 teaspoon crushed red pepper flakes
- 1 pound cherry and/or Sun Gold tomatoes, halved
- 1 pound picked cooked lobster meat or cooked large shrimp
- Freshly ground black pepper
- 1 teaspoon finely grated lemon zest
- Lemon wedges (for serving)
Tri-Colour Raspberry Tart

Tart For crust, cream butter and sugar together
- Tart
- 1/2 cup unsalted butter, room temperature
- 1/4 cup sugar
- 2 egg yolks
- 1 cup all purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon salt

- 6 ounces bittersweet or semisweet chocolate, chopped
- 3/4 cup whipping cream
- 1 teaspoon vanilla extract

Herbed Mushrooms and Asiago Baked into Brioche

Dough To prepare dough, sprinkle yeast over milk in the bowl of a mixer fitted with the paddle attachment
- Dough
- 1/2 cup milk, room temperature
- 1 tablespoon dry active yeast
- 2 tablespoons rum
- 3 cups all purpose flour
- 2 tablespoons sugar
- 1 teaspoon fine salt
- 6 large eggs at room temperature
- 1 1/2 cups unsalted butter at room temperature
- Filling
- 2 tablespoons butter
- 1 pound sliced cremini mushrooms
- 2 cloves garlic, minced
- 2 teaspoons chopped fresh oregano
- 1 teaspoon chopped fresh thyme
- 2 tablespoons white wine or vermouth
- 1/4 cup finely diced red bell pepper
- 2 tablespoons chopped chives
- 2 tablespoons chopped flat-leaf parsley
- salt and pepper
- 2 cups grated Asiago cheese
- 1 egg mixed with 2 Tbsp cold water for brushing

Preheat oven to 350 degrees F (180 degrees C) and place the rack in the center of the oven
- 5 ounces (150 grams) semisweet or bittersweet chocolate chopped
- 1/2 cup (1 stick) (113 grams) unsalted butter, cut into pieces
- 2 tablespoons (15 grams) cocoa powder
- 1 cup (200 grams) granulated white sugar
- 1 teaspoon pure vanilla extract
- 3 large eggs
- 3/4 cup (95 grams) all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup (125 grams) semi-sweet chocolate chips (optional)

Heat oil in a pot, then add in the minced shallots, star anise and cinnamon stick

- 700 g yellow noodles
- 150 g of pork belly
- 1 1/2 slices of sutchi fillet sliced into bite size (optional)
- 1 egg yolk
- 4 eggs
- 6 or 7 Cup of water

- 2 star anise
- 1 cinnamon stick
- 1 chicken stock cube
- 2 tablespoon of dark soy sauce
- 2 tablespoon of soy sauce
- 3 small rock sugar

- Sliced red chillies
- 6 to 8 cloves of garlic, minced. (add in some oil, mixed well and set aside)

- 1 whole Large Onion
- 8 cloves (to 12 Cloves) Garlic
- 1 cup White Wine (or Substitute Another Cup Of Stock)
- 1 cup Chicken Stock
- 4 whole Eggs
- 1-1/2 cup Parmesan Cheese
- 1 bunch Parsley
- 1/2 sticks Butter
- 1 Tablespoon (to 2 Tablespoons) Black Pepper
Shepard's Pie

1. Put the potato chunks in a large pot of cold water
- 1 1/2 pounds all-purpose potatoes, peeled, quartered, and rinsed
- Salt
- 3 tablespoons butter, divided, 2 tablespoons kept chilled
- Freshly ground pepper
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 carrot, peeled and chopped
- 1 celery stalk, chopped
- 1 pound raw ground lamb (for shepherd’s pie) or raw ground beef (for cottage pie) OR 1 pound finely-chopped leftover cooked lamb or beef
- 1 tablespoon all-purpose flour
- 3/4 cup beef or vegetable stock
- 1 tablespoon chopped fresh thyme OR 1 teaspoon dried [I used dried]
- 1 tablespoon chopped fresh rosemary OR 1 teaspoon dried [I omitted the rosemary, as I had neither form on hand]
- Pinch ground nutmeg

- 3/4 pound (12 ounces) (340 grams) semisweet chocolate, coarsely chopped (can also use 2 cups semisweet chocolate chips)
- 1/2 cup (113 grams) unsalted butter, cut into pieces
- 3 large eggs, at room temperature
- 1 cup (200 grams) granulated white sugar
- 1 teaspoon (5 grams) pure vanilla extract
- 3/4 cup (95 grams) all-purpose flour
- 1/2 teaspoon (1 gram) baking powder
- 1/4 teaspoon salt
